Question Question about the 1 min. muffin

When preparing the 1 minute muffin, do you beat the egg before adding to the cup with the other ingrediants? Also is the addition of Splenda neccessary, or can it be omitted for a more 'savory' muffin?
Also, cottage cheese is not allowed upon induction but it is an ingrediant in the Diet Revolution rolls, which are allowed.? Or am I missing something? Thanks guys!

You don't need to beat the egg first, just plop it in and mix. You don't need to sweeten it, either. Try some garlic powder and parmesan cheese.

The Revolution rolls don't have a lot of cottage cheese in them, so the carb count is minimal. I don't have much success making them, though. They always end up way too flat. I stick with the OMM, instead.

Thanks for the info, I was thinking perhaps the egg was just plopped in the cup with the other stuff and like a coddled egg or
something, but it sounds like you actually mix everything together in the cup and cook. I don't have teacups but I'm sure a tiny bowl will suffice. I'm also curious about all these SF syrups everyone is talking about like Divinci? Only available on line I take it? Anyway thanks again for answering!

Our WalMart Supercenter has DaVinci's syrups in the coffee section. Ours has a limited variety, but you can usually find vanilla, hazelnut, kahlua, caramel and raspberry in the sugar-free. I buy other flavors from netrition.com.

I use a Ziploc or Gladware bowl to cook my muffin. Any container will do. I find that the plastic bowls clean up better, and they tend to make a larger, flatter muffin. I've even cooked it in a cereal bowl. It makes a funny shape, but the taste is the same.

You can also bake the batter in muffin tins in the oven, or thin it somewhat and fry pancakes.

Yes, the egg is mixed up, because you are making a batter.

When you say thin it for pancakes, would you just use water?

I have tried the pancakes with Bob's Red Mill low carb bake mix - they are excellent BTW, but the carb count is so high I want to find something else.
