Please analyze my intake

Default Please analyze my intake

Hi, all. While I've read the Atkins book from front to back and have been eating low carb for 2 weeks, I'd like some input, please. My usual daily diet consist of:

2 cups of coffee with heavy cream
2 hard boiled eggs
sometimes a piece of cheddar
~~~~~~~~~~~~~~~~~~~
3 cups raw spinach with drained tuna (1 can), or 1 chicken breast, or 1 cold leftover piece of salmon (yum!) and oil & vinegar dressing
1/2 c. sunflower seeds in the shell
2 pieces string cheese
1 2"x2" square spinach/cheese/egg casserole
~~~~~~~~~~~~~~~~~~~~
green salad with romaine and spinach
meat of some sort
allowed vegetable
~~~~~~~~~~~~~~~~~~~~
2 liters or more of water

I'm eating too many carbs? Not enough? Too much spinach?

Any help will be appreciated.

Lilith, you might try an online food tracking program like Fitday to see how your carbs and fiber are adding up. There are many people here who use it, some daily, some just once in awhile when they need to refocus their eating habits.

For just being 2 weeks into your program, you might possibly be overdoing it on the veggies, but I think that the sunflower seeds might be more of a problem.

Just see how your weight losses are going, and if you are happy with what's going on, then your food will be ok. If not, then cut back, first on the seeds, and then a bit on the veggies.

Your menu sounds pretty good, though. Actually, it's making me hungry!

Nita, I tracked my intake most carefully using the FitDay website. You're right, I'm eating more carbs than I realized - the sunflower seeds, particularly. They've been jettisoned for the time being. I also found out that the jerky on which I was snacking had been marinated in a sugary marinade. They, too, are gone.

Slimmer, here you go.

1 32 oz bag frozen spinach, thawed and drained
2 eggs, beaten
1/4 heavy cream
1 c. or so shredded extra sharp Cheddar cheese
1/2 grated or finely chopped onion
salt and pepper to taste
Extra cheese to top

Beat the eggs and cream, add the onion, the cheese and the seasonings, and mix thoroughly. Stir in the spinach (I use my hands for this), then spoon into a well buttered casserole dish, top lavishly with more cheese (Swiss makes a nice, golden crust). Bake at 350F for about 30 minutes, or until a knife comes out clean when inserted.

I like this hot right out of the oven or cold. It's great with fish and makes a good snack. It solidifies a little as it cools, making it easy to eat with your fingers.

lilith, the other thing I noticed was the cheese... tho you didn't have that much.... it is salty and can cause some people to retain water....might want to really limit it for awhile....
thats all I see, that cassarole sounds great.... might have to try it this weekend.
