    Default Unsweetened Cocoa Powder question

What kind of carb would unsweetened cocoa powder be considered. How many servings a day would be too many? I have found two recipes I really like that each uses 1 tablespoon of cocoa. I am thinking I should probably keep it to one of these a day. One is like sf milk chocolate candy and the other is a chocolate soufflé. Boy they hit the spot!dance2

Look at your box of cocoa. I use Hersheys or Nestles, whichever I can find. I believe it's less than 2 per tbs. net. So a serving a day would probably be fine, and you're probably not going to get an entire tbs in a serving, anyway. I'm not sure if the carb count differs from brand to brand, or to type of cocoa powder (regular vs dutch process).

How about posting your recipes? They sound good!

Queen Mama, yes you do get the whole tablespoon in a serving. I use Hershey's or Nestle's too. The Soufflé is one serving with 1 tablespoon cocoa, dash of salt, 1 tablespoon coconut oil, 3 tablespoons sf chocolate syrup, 1 tablespoon granular Splenda and one egg. Warm the co in microwave for 20 sec. stir in rest of ingredients. Microwave on high for 1 minute. The second is 1 tbsp cocoa, 1 to 2 tbsp heavy cream, 1 tbsp Splenda granular, stir together till creamy. It is like a cross between pudding and milk chocolate candy.

Hi, sorry to jump in but the subject caught my attention. I've been making something similar to this, but afraid to have it more than once a week. Found it on one of the sites as I was looking for recipes...called Linda Sue's Mock Brownie Danish but I've been calling it chocolate souffle because it tastes just like it, absolutely sinfully delicious. Doesn't say how many carbs but I'm sure we can tally them up looking at the ingredients....

    2 ounce cream cheese
    1 egg
    4 tsp splenda
    1 tsp cocoa
    1/2 tsp vanilla

I have made that one too LCinNC. I have to limit all the cheeses as they seem to stall me. I guess I will find out if that much cocoa stalls me if I keep eating it.
Your recipe has 5.8 total carbs and .4 fiber for 5.4 net carbs according to Sparks Recipes nutrition calculator.

    Thanks for the input.

Thank you Hesperis! Guess it is a good thing that I am limiting this to one night a week. I can understand about the cheeses. Keep us updated on the cocoa. Hope it works out for you. I'm going to try your souffle, it sounds yummy! Thanks again for looking up the carb count and passing it on. Much appreciated.

Flavanol in cocoa lowers LDL cholesterol and raises HDL, Lowers blood pressure and improves insulin function. It also improves skin structure and function

    Google cocoa flavanol.

I also use Hersheys unsweetened cocoa powder, it substitutes pretty well in my recipes. DH has forgotten what real goodies taste like and says that mine taste as good(LOL). Thats good though, I plan on keeping him on lc this time around, last time he gained all of his weight back plus 15 pounds. That will never happen to him again, or myself either. Judy

I just tried the cocoa/heavy cream with sweet & low... It tasted just like melted ice cream which is what I always did since I was sensitive to the cold of solid ice cream. It was really great to find this. Thank you! MaryLee

Hi Hesperis, your post jumped out at me. I'm using unsweetened cocoa a lot. Doctor's orders, which I couldn't believe. He said it's the top antioxidant but it has to be non-alkalinized. Here's a page he also recommended (the whole site, actually), but this page has wonderful info about unsweetened cocoa.

Oops, couldn't figure out how to do it. So...go to Cardiologist-wife.com, then, on the left, 3rd one down, go to "Cocoa Information" page. Incredible health info on that site by Dept of Health cardiologist. Great recipes on the site too!
