Cathi, I'm glad you found this site. You are absolutely correct. You are in complete control of what you chose to eat or not eat. Often, that requires planning ahead so you have a l/c option if you are eating out. Good luck as you get back on the low carb wagon.

| Hi Amber, Thank you so much for the welcome...I do love LC I did it years ago and did very well and went for 3 years without ever eating any sugar or anything I shouldn't...the problem was I burned out because I never ate more then 20 carbs aday for those 3 years... so this time I am wiser and will make different things and add carbs as I go. | Thank you Goddess for moving me where I need to be! I am eating celery and cucumbers but what else can you recomend beside salad durning the first 2 weeks? I don't want to burn out eating the same things all the time like I did last year. Also I want to put my picture on the site like you have yours I went to where it said edit picture and I imported one but it wasn't there when I looked? am I missing a step? Thanks, LL |

| Cathi, a l/c option is just short hand for low carb option. What I ment was that when you are eating out, you make sure there will be low carb dishes for you to choose from. that means you may want to avoid certain restaurants or if you must go to one that has limited low carb dishes, don't be afraid to ask for substitutions to menu items that will make the dish more low carb friendly. I have even taken my low carb muffins into restaurants so that I can have a bread available for me. The bottom line is that if you plan ahead, you can avoid putting yourself in situations where you will have no acceptable choice, if you want to eat something. I see you also asked for suggestions for lunch. Here is a link to a thread where I post my daily menu's. My lunches either are all, or can all be made induction friendly. Five A Day: The COLOR way! You may have to go through a few weeks of menu's to see the variety of dishes I use for lunches as I plan my menu's weekly and tend to have the same 1 or 2 dishes for a given week to help with my meal preparation and planning. I think you will find enough variety there to keep you from getting bored. If you see something that looks interesting and would like a recipe, just ask.

| Oh Henry, Wow you have given me hope and ideas for new and exciting LC meals I would love to have some of those recipes like for 1c split pea, Delicata Hash browns, dreamfield spaghetti pie, maggies cereal, pumpkin bake and sourcream& sherry mushroom cream gravy...now there is no hurry I don't want to make you work to hard but those all sound so good! can you e-mail those too me or are they already posted on this site? I have to admit I am having a little trouble understanding how all this works not the diet just the website...I will have to have my daughter come show me. I have a recipe that I would like to share with you that my husband made for us last night we were wanting some kind of dessert but not cheat so he took about a 1/4 cup of heavy whipping cream and put it in the kitchen aid and just added 1 indivdual pack of cherry crystal light (the cheaper brand) that you put in a water bottle to flavor the water...Wow it was so good I am going to make a cheese cake (without crust) using this same product. | Cathi, many of the recipes you asked about are in our Low Carb Cooking Forum that you will find on the forum home page. There is a search feature that you can put in a term like "split pea" and it will pull up several threads. Here is a link to that forum where I posted the "split pea" soup recipe. Some I made only once, others have become regulars in my meal planning. I continue trying to find new low carb dishes to add to my repetoire. Don't be afraid to try some of the l/c substitute dishes. For example, I saw the faux split pea soup recipe several years before I decided to try it. However, it looked kind of hokey and I passed on it. I now wish I had tried it sooner. After you look through the recipe forum, if you want a recipe for something that I have listed in my menus that is not already posted, please don't hesitate to ask.

| The recipe for the cereal can be found here, Cathi. It's a staple for me and many others in the community - especially in the winter, when you want a hearty start to the day. It's very versatile, as you can "dress it up" however you want depending on your mood.
