| My DANDR book shows 2 tablespoons of cheddar has .2 grams carb. Remember this is a volume measurement. Fitday.com shows that 1 oz (by weight) of chedder is .4 grams carb. I think Atkins limits cheese because it is very calorie dense and very tasty that some people would have difficulty self limiting their consumption.

| Cheese is one of those foods that is calorie dense so you can consume a lot of calories with just a little cheese. All cheese has some carbs because of the lactose (milk sugar) in the cheese. That sugar content is one of the reasons why Atkins recommends limiting the amount of cheese during induction.
