I ate a 10 oz package of frozen spinach as an entree' for dinner tonight...and I'm worried it's put me over my 20 carb limit. According to the Nutrition Facts, it only has 2g of carbs per 3.5 oz serving along w/ 2 g of dietary fiber. Does this mean it's net carb rating would be 0?
Has anyone ever heard of frozen spinach with 0 net carbs? I'm a bit skeptical.

Welcome to LCE!

The fiber grams cancel carbohydrate grams, one for one. Yes, that's exactly how to figure the net carbs. Never worry too much about good veggies. If you're doing induction, it is suggested that you have 3 cups of salad greens per day OR 2 cup salad greens plus 2/3 cup of cooked vegetables in the below 10% carbohydrate category.

Good luck!

Isn't spinach wonderful?

When I make spinach salads, I don't count the carbs even if the package says it has a couple. Spinach is a powerhouse food and you could never eat too much.

Enjoy!

A cup of spinach shows up on the Atkins site carb gram counter with about .2 net carbs. A bit more on the USDA site. They can say 0 because they get to round off the numbers. Still a good bang for the buck. Like MarcieLynn said. a real good food.

I eat a can of Popeye spinach straight from the can at my desk at work for lunch. It's great.

Seriously, don't stress about the carbs in veggies! Green veggies (in my humble opinion) should be *free foods* of which you never count the carbs.

Have you EVER known anyone who got fat from eating too many vegetables???
Enjoy!
I love spinach, too.

I'm with the other ladies... Spinach is wonderful. Boat load of nutrients and full of fiber. can't go wrong with it, and as Kumus said - you can't eat too many good veggies. I've never once worried that i got too many carbs from green vegetables.

How can I get to like spinach? I can tolerate a little in my salads and I love spinch dip (esp. TGIF's frozen), but for the most part it just taste gross. I would love to be able to eat it since it is so low carb.

Any suggestions?

You might try adding it to other foods besides salads: Throw a handful or two into a pot of soup or omlet - it cooks down to almost nothing. It's good sauted with garlic, onion, and mushrooms, too.

You might like this recipe (attributed to Susanne Sommers). Here is a posting I copied from a topic on the old board:

Spinach Sandwich "Bread"

1 box chopped frozen spinach (defrosted and drained if it's watery)
4 eggs

Optional: Add to your taste, any or all of the following:
Parmesan cheese
bacon bits
salt & pepper
minced garlic
paprika
dehydrated onion
herbs
(recently, I used salt & pepper, garlic, and Italian Herb seasoning in the mix, then I sprinkled about 2 tbs of grated reggiano cheese over the top.)

Mix it all together. Spread it in a greased 8" or 9" square pan for thick bread or a 9" x 13" rectangle pan for thinner bread. I like to make it in a rectangle pan for the thinner bread. Now, the trick is to really grease your pan well with butter and then with pam, so it will come out easily. Or, line the pan with greased baking paper. Bake at 400 for 15 minutes or until firm. Let cool, cut into squares, and using a spatula go around the edges ease out the first "slice". It will be a little hard at first but then it will get easier once you get the sides started. Some people say they remove the whole thing from the pan before cutting - so it's one big sheet. But, that seems more difficult to me.

I line the pan with cooking parchment sprayed with PAM, which makes removal and cleanup easy peasy!

You might like this, I sure enjoy it..

Breakfast Quiche

1 dozen extra large eggs
8 oz softened cream cheese
1.5lbs browned meat (I use Hot sausage)
1or 2 package (I use the frozen stuff in boxes) chopped spinach or broccoli, drained
1 small onion chopped
3 cups shredded cheese (your choice--I use cheddar/pepper jack mix)

In large mixing bowl, mix softened cream cheese and eggs until well blended (I use a hand mixer, others use a blender) and lumps are nearly gone (I sort of like the lumps). Add chopped green onion and vegetables and mix thoroughly. Add shredded cheese and mix all together with spoon. Add the browned (and cooled) meat of your choice and mix all together with a spoon. Pour into sprayed baking dish (large one) and cook at 350 for 50 minutes. I like mine a little brown on top. Let stand for 10 minutes if you’re eating it right away. If freezing it, let cool completely and cut into pieces.

These recipes sound yummy .

David can you freeze the quiche?

I guess I am going to have to go stock up on frozen spinach. I cannot wait to try the bread.

Use fresh uncooked spinach leaves in your salads. If it's too strong by itself, mix it with lettuce. Canned spinach is gross, I agree.
