I'm wanting to start this diet but I'm unsure.

"Low Carb Newbies" at Low Carb Diet Support: "The deviled eggs had mayo. I do have the book and I have read it but I find it very confusing! Atkins says to eat "liberal" amounts of meat and fish. But in other places, ...."

The deviled eggs had mayo.

I do have the book and I have read it but I find it very confusing!

Atkins says to eat "liberal" amounts of meat and fish. But in other places, he says that too much protein can be converted to glucose, so to be careful. He says not to count calories, but in another place he says that 2000 calories is about right. He says not to worry about meat and fish, but the sample meals show small amounts, i.e. 6 oz.

He didn't say anything about making baked goods with nuts and some sort of protein product.

I thought that since you have done so well that you could help clarify some of this.

Betty,

The good Dr. was just cautioning us against stuffing ourselves. You'll find as you progress that your hunger will diminish, and you probably couldn't eat enough to do the protien/glucose thing, anyway. Also, I review the book quite frequently, and while he talks about calories in the exercise chapter as an example, he really doesn't stress them much anyplace else. Please don't worry about them right now.

In my understanding, ground almonds is almond meal, but I've never been able to lay my hands on any flour. There are plenty of other baked goods to be had. Though I wouldn't worry about any baked goods until you're clear of induction.

I'd suggest keeping your meals during induction simple, and more importantly, repeatable. You get too fancy, and hidden carbs and such start sneaking in. Call it food boot camp, and plod on through and be amazed at the scale. Start concerning yourself with fancier stuff in the 3rd or 4th week or so.

The first baked good we re-introduced was Atkins Lemon Poppy muffins... we STILL have those 2 to 3 times a week. We really like them, and a couple makes an easy 6 carb breakfast. Even one with some bacon and eggs changes the face of that meal, too.

I understand I'm not to worry about almond meal or flour right now but what is the difference? I thought they were both just ground almonds. I've been reading low-carb recipe sites and I will admit I'm becoming a little concerned. This looks like it could get expensive. I'm still feeding 4 people and more often than not several friends of the kids.

We are very lucky in that we happen to live in an area were we have several major colleges right at hand, my children have been able to live at home and go to school. They bring kids home with them who may not have seen their families in quiet a while or had a home cooked meal in a while. I've become a magician at taking a few cheap ingredients, usually carb laden foods, and making enough food to feed a small army.

We have Rice University, The University of Houston, St. Thomas University and a marine branch of A&M University. There are also several medical schools in and around the Houston area, which has kept the cost of school way down, but it's still not cheap.

If you buy many specialty products and ingredients, then yes, it can get expensive.

However, if you stick to the basics such as fresh meats (buy whatever is on sale or a manager's special that day), fresh veggies and healthy fats for saute or frying (lard, butter, coconut oil, olive oil) then it really isn't that much more.

Some people actually save money eating this way because they cook more and they don't blow money on expensive packaged items such as cereal at $5 a box.

As for the visiting kids, I would have my dinner a little earlier than everyone else. That way, you can have what you need for your diet (i.e. a steak and veggies; roast chicken and veggies; salmon and a salad, whatever) and then you can server the more "economical" meal to everyone else.

And don't forget about eggs. Eggs are so inexpensive. You can make things like quiche with a little cheese and bacon add a salad and/or veggie dish and you have a very filling meal for fairly cheap

Thank you all so much for your help. You are a great group of folks. I'm feeling very bummed out right now, I think I just need to go to bed. Gotta get up at 4:30 in the morning for work, need my beauty sleep. Good night all.
