Nicole
you've lost 10% of what you want to lose in 8 days. I'd say pretty good job on your part.
The more you have to lose the more you'll lose on induction usually. There are exceptions. But you may lose a pound or so more this last week.
Just keep doing what you've been doing and don't rush it. It'll happen!

One suggestion would be to dump the redi-whip.
Ok 2 suggestions-Use a food tracker like www.fitday.com and make sure you're getting your 20 carb allowance, if you aren't already.

At first glance, I'd say:

Make sure you're limiting yourself to 4 ounces of cheese per day, and then only aged cheese (nothing processed or pasturized).
Ditch the Redi Whip. There's sugar in it. Make your own from heavy whipping cream.
Don't eat the salami -- too much salt and it's a processed food.
Up your veggies dramatically. Consider them a free food at this point, yet don't eat the high glycemic ones such as squash, onions, tomatoes, carrots, et cetera.
Make sure you're not getting sugar (carbs) from other sources.
Read "possible help for newbies" in the newbies section.

My two cents...
