I rub my chicken with olive oil, put my spices on it, and put butter pats on the baking sheet. About 20 minutes into baking, I start basting with the butter. It doesn't have a deep fried coating, but it does have a nicely browned crispy skin.

When I deep fry it, I make a coating of grated parmesean cheese mixed with a packet of ranch dressing mix. Some of the coating comes off in the deep fryer, but most stays on, and it tastes like Golden Chicken. I haven't tried this in the oven, because I don't think there's enough moisture to cook the coating.

Yep! (Pretty cool, huh?!) Just use a good quality oil - olive oil, safflower, canola, sunflower, etc.

Just look for oils that are cold pressed, or expeller pressed. You can also fry in (real) butter without worry.

I coat my chicken and fish in soy flour mixed with seasonings and it fries up perfectly in my deep fryer. It browns a bit quicker than regular flour so I use smaller pieces. I also have used Atkins bake mix and it works well, too, but the taste is not as good. I hear almond flour mixed with parm is a good mix, too. And yes, we don't have to give up our fried foods!

I don't bake my "fried" chicken, I fry it in a deep fryer also.
