I have a big problem because my fridge is very small (apartment sized)and most l/c foods require refrigeration (even nuts). In the interest of variety, any suggestions as to l/c foods that do not require refrigeration or freezing would be much appreciated. Shopping daily is not an option. Thanks,

Hi kateryna,

May I ask what nuts your eating that need to be in the fridge? I never keep mine in there. Of course they never last to long in this house! LOL

As for freezing foods... well you can freeze cheese, cooked meats, and buy vegies (ex. broccoili and cauliflower [sp]) and cook them and freeze them. That may help with the space issue. If your not on induction you can have LC breads... and I just take it out of the freezer as I need it. Works out great that way.

It seems nuts should be stored in cooler places (I read that somewhere and can't remember where) and there are no cool places in my 3rd floor apartment except for the fridge.

My freezer is tiny because it's in my tiny fridge. I buy canned tuna, salmon, sardines, kippered herrrings, chicken and ham flakes and only refrigerate one can at a time just before eating them, but I hate canned vegetables of any kind and don't buy them. Have I missed anything else that I can use that doesn't require refrigeration?

You can find a shelf stable tofu as well. The fresh veggies certainly need the fridge and do take up alot of space unfortunately. You can also have Spam, but many people don't like this and you do have to watch the sodium and I certainly wouldn't eat it very often. How about some lc hot cereal mix such as flax-o-meal, or keto hot cereal? You probably are having to make more frequent trips to the grocery store. I'm sure it is difficult storing things and it will be more expensive for you since you won't be able to catch the sales and buy in bulk then and store it in the freezer. If you have an extra space you might consider buying a small chest freezer and that would help you out immensely.

kat,

I mis-read your post... I thought you were looking for stuff to freeze instead of refridgerate. I really don't have any other suggestions for stuff that you don't have to put in the fridge or freezer other than what sweet has suggested.

I had no idea that nuts keep there flavor better when fridgerated. But again.. they don't last long enough in this house to worry about that! LOL

Have you thought about looking for maybe a small freezer? That may help you out. I know they can be kind of costly, but some times you can get them in rumage sales.

Nuts might keep better in a cool dry place, but if you're running out of space, take them out and put them in a drawer. They don't need all that much cool.

You might need to just look for things in the fridge to throw away. Seriously, I have trouble thinking of good things to eat on this diet that don't require refrigeration. Strange. All I can think of are canned vegetables like green beans and mushrooms. Onions don't require refrigeration. I'm running out of ideas fast.

Hi kateryna,
I can't think of any other food suggestions for you other than whats been suggested. But, the only thing I can think of is really organized storing of everything, get some stackable containers, once you break down some foods into packages, they store smaller (broccoli, cauliflower ect.) Freezer bags work well for that even!

I sometimes wish I had the problem of not bein so organized all the time, but, for whatever reason, I'm entirely too organized! (Guess being self employed thats a godsend)
Advise I can give you on organizing the fridge is to do it right after you shop - as you put it away, sort it, split it up, bag it, whatever it takes. I find if I put it in the fridge and walk away, I won't get back to it once I find something else to do with my spare time.

Hey Guys! I've just finishing re-reading Atkins book DANDR and he does recommend nuts be frozen. I make my own nut and seed mix by buying a variety of raw nuts and seeds in bulk (don't like salted and roasted nuts), mixing them together, then portioning 1 oz servings (I have a tiny food scale) into tiny snack bags and then refrigerating. One small problem is finding macadamia nuts in Edmonton. Suppose by the time those little suckers should make it up north this far they are out of stock.

Hi Kateryna!

I can many things including meat. I'm married to a hunter and we use nearly all of the meat off of the game animals. In the fall, our freezer can fill up quickly so we do a couple days worth of canning.

This also is great for garden vegetables. They taste better and you know exactly what's in the food you're eating.
