Thread: Need some snack ideas!!!!

    I am starting to feel a little burned out with the same old things. If anyone could feel me in on some new snack foods, I would greatly appreciate it. I do really good on my meals but I am starting to struggle in between times when I get bored or a little hungry and just want to eat something. Any help anyone can give me will be greatly appreciated!!

    Shannon,

    Where are you at in your program? If you are on Induction on Atkins, snacking is rather limited. After that you can start adding Strawberries and/or Blueberries and whipped cream sweetened with Splenda, ALL kinds of nuts with the exception of peanuts (which are really legumes and not true nuts), raw veggies and dip, pork rinds and dip, ham rolls with cream cheese spread on ham slices (with a bit of green onion or chopped olives in the cream cheese), sugar-free jello and whipped cream (homemade), Whipped cream and s/f Sugar-free Pudding, cheese cubes, etc. Just remember to take out ONE serving size of whatever you snack on and put the rest away. When you are done, you're done. It's easy to go overboard even on LC snacks and sabotage yourself. I eat my snacks VERY slowly and savor every bite. That way it seems to last forever. I have even used s/f rootbeer or Canfield's s/f chocolate soda with a couple of TBS. of cream as a snack and it tastes like a float. Yum, yum!!!

    Here are a few ideas. Many of which have already been mentioned of course...

    Pumpkin seeds, Sunflower seeds, Almonds, Macadamia nuts, pine nuts, etc. check carb counts.

    Gen-Soy makes a variety of little soy crisps, some of which are about 15 carbs per 25 crackers. a handful of those might be OK.

    Some folks have made cheese crackers by frying up cheese until it sort of hardens. I've done it, not bad for a crunch. A lot of work though.

    Thin sliced pepperoni or salami. Need a crunch, bake, fry?, broil? the pepperoni (you know what I mean).

    Pork rinds, of course...

    DaVinci SF syrup and water (mix to your taste), freeze to make homemade popscicles. (You know, like we used to do with Koolaid as kids (on the assumption that you are as old as I am)...

    SF jello squares.

    ground beef, cheese, jalepenos (or bell pepper for the milder set). Cook the beef with the peppers, mix in the cheese. Use low carb tortillas to make quesadillas. Cut into bite size pieces and store in fridge. Heat up later, or eat them cold. Dip in salsa, guac, etc...

    Celery, radish, etc. dipping sauce if you want. Maybe with a cream cheese spread, or my DW's feta cheese/basil/Sun dried tomato spread if your lucky.

    You can get low carb tortilla chips. Some brands are OK.

    Fresh fruit: Strawberries, blueberries, etc. I like them with cream, unsweetened.

    Oh yeah, cheese squares...

    And don't forget, sardines and that sort of thing if your into it.

    The Atkins book has a recipe for a cheesecake-snack that I have varied slightly by doubling the recipe and making them in cupcake cups instead of on a baking sheet. This way I can take them with me and have a sweet snack on the go (1 carb each).

    The recipe is:
    4 oz cream cheese
    9 packets of splenda
    2 eggs
    blend with mixer and cook at 350 for 10-12 minutes (makes 6)

    Also love the pumpkin seeds (a big bag has 5 carbs but they're so salty I usually can only eat 1/2 the bag) and the sugar-free jello.

    I also like to put a plate of pepperoni covered in mozz cheese in the microwave for a pizza memories snack!

    Also, smoked salmon with cream cheese
    Pork rinds of course
    Deviled eggs
    Buffalo Wings - yes, I love them for my snacks as well as my meals

    yum yum yum!
