| Just looking for breakfast ideas. I am going to start on the induction of Atkins on Sunday next week. But I need ideas for breakfast. So come on all, what are you all eating for breakfast? | I usually have an egg scramble (egg beaters actually). If I am at work it usually has cheese and sausage. At home I will add what everveggies I have available. When you get out of induction you can try some of the low card cereals. 261/228/220? (recently re-joined, Started Atkins on 6/12/03) |

See link below to BrightLady's recipe for sausage, egg and cheese muffins. They are awesome, portable, and even non-LCers love them. I also made some with bacon. They also refrigerate and keep well, so you can make them ahead. http://www.lowcarbeating.com/6/ubb.x...4&m=7206090814 start 09.01.03 @225 current 200 goal 130ish "I find that the harder I work, the more luck I seem to have." ~ Thomas Jefferson

Breakfast can be anything, really. All you're doing is breaking your fast (thus the word breakfast). Any leftovers from the day before are good to eat, even cold. Such as pork chops, hamburgers, chicken breasts, et cetera. If you're in a hurry, you can take a slice of roast beef, turkey, or ham and roll it up with a slice of cheese. Make a fwe of those, pop them in the microwave for a few seconds, and eat that. Just my two cents... April 352 / 201 / 180 5'10", large frame, size 13 shoe www.geocities.com/aprilreinhardt2

I love smoked salmon rolled up with cream cheese, chopped celery and lettuce - YUM! It's a nice break from eggs. Though yesterday I had leftover steak, sauteed mushrooms and scrambled eggs. Jen 175/129/120

I've been eating an egg recipe that's a twist on one I found in "500 Low Carb Recipes" by Carpender: Place a slice of turkey on a plate and warm in microwave. Melt 1 tsp. butter over med. heat in small frying pan and add 2-3 eggs - don't break yolks. When they start to sizzle at 1 Tbs. water and cover. Let cook just a couple of minutes till yolks soft-set. Slide eggs out onto turkey. Add another teaspoon butter, brown a bit then add a little fresh lemon juice. Pour lemon-butter sauce over eggs. Top with freshly grated parmesan. This is delicious and keeps me full for a long time. Staci

Eggs, any style, are usually my favorite, but lately I have been eating a chicken breast, sliced in pieces (while raw) and sprinkled with seasoning salt, sauted in butter. After that's cooked, I wilt a couple of handfuls of spinach in the pan with butter. Teri

My absolute favorite breakfasty meal is a 3-egg omelet with 1 oz. low-carb pesto sauce and 2 oz. of parmesan. It's sooooo divine. I tried it with mushrooms today. Scrambled eggs and soy sausage is another yummy one for me. @April: good idea. I'm so hung up on the "this is what you're supposed to have for breakfast/lunch/dinner" that I miss out on all of the other yummy options in my fridge. Which means that I can now have my omelet for dinner. Oh, boy! Atkins 08/23/03 160/142/???

Ooooo, pesto! I hadn't even thought of that! I love pesto, but like so many high-fat "luxuries," I've kind of shoved it out of my counciousness during my years of low-fat brainwashing. I have to get some!!!! Life is good!!!

The most important breakfast recipe is VARIETY. I found it difficult to eat another egg after eating two or three each day for two months. I decided to do what April suggests above - mix it up. Just because it's 5am and I'm stumbling around stubbing my toe in the kitchen doesn't mean that I have to eat "breakfast foods." Some mornings I'll grill a Filet Mignon on my George Foreman just for kicks. Other days I'll grill a chicken breast and have some spinach. After you get over the "weirdness" of eating something other than "breakfast foods" in the morning, you'll find that it's actually worth getting up a few minutes early to prepare an awesome meal of whatever... and with all the energy you're gonna have with LC eating, why not! -Geoffrey LC since 8/11/2003 196 / 158 / 160 Goal met, going for the extra mile.

since i pack my breakfast and lunch and eat at work, I take cocktail smokies (little cocktail sausages) and usually hard boiled eggs. I heat the saugages in the microwave for about 1min (I usually eat anywhere from 5-8 little sausages) and one or two eggs, sometimes I will make egg salad or just eat them without mayo. On weekends I usually go for omlelets, bacon, etc. http://www.youravon.com/cnorulak carolyn in texas started 8/11/03 327/298.5/150

This can be kind of pricey but there is a cereal called Keto Crisp. It has a total (not net) of 3 grams of carbs per serving. I like it alot. I mix 2 tablespoons of cream with just enough water to give me some "milk" It is a natural soy cereal with about 22 grams of protein per serving. Yum!
