Thread: Thanksgiving Day Support!!!

    I just started the Atkins diet a week ago, but I am getting nervous about what I can eat at the family Thanksgiving dinner!! Any suggestions? Thanks, Dina

    Turkey and a big salad. Green been casserole (LC style).

    My mom's making LC stuffing and LC gravy for us, but we've both been on awhile.

    Bring a vegetable casserole or make a stuffing out of low carb bread. But I plan to have a small spoon of sweet potatoes and the green bean casserole (I'll pick out those onion thingies). I was asking my sister what was on the menu (as if it's changed much in 40 years) and there were only three no-no's for the dinner. I'm bringing a low carb dessert or two.

    Planning on eating very small (2 tsp's, 3 max) of sides and our meat. Making low carb green bean casserole, deserts, potatoes (reds instead of whites). Not worried about the bread per say, bread has never been a problem for me. I am loading up with veggies and whipped cream with chives to lesson the 'urge'.
    Felt that taking very small quantities would reward this much work, just hoping stomach cramps do not happen..

    I am a foodie and a gourmet, which is why I am a little plump around the edges...anyway, I am lucky enough to be hosting Thanksgiving dinner and refuse to let the holidays ruin all my hard work so I researched and have been practicing recipes for the big day. Here's my menu and where the recipes came from:

    Scallop Soup w/ Cilantro Cream (atkins.com)
    Roast Turkey w/ Bourbon Gravy (my creation)
    All-American Dressing (My creation)
    Whipped Root Vegetables w/ Roasted Garlic (My creation)
    Candied Ginger Sweet Potatoes (atkins.com)
    Roasted Green Beans (atkins.com)
    Romaine & Red Pepper Salad (atkins.com)
    Endulgent Chocolate Cake w/ whipped cream (atkins.com)

    My sister-in-law is already complaining about the lack of mashed potatoes but she hasn't tasted my root vegetables, which are incredible! My husband did convince me to make a real deal apple pie but this isn't my favorite dessert and I think I'll be okay with the atkins approved chocolate cake.     I made up the name, but here is the recipe. It's still dressing made with bread and higher carb items like nuts and carrots so be careful...

    2 loaves low carb bread whatever flavor you choose, cut into 1-inch cubes.
    2 eggs
    2 cups turkey or chicken stock
    1 clove garlic
    1 medium onion
    3 pieces bacon
    4 to 8 oz toasted walnuts (depends on your taste)
    1 grated carrot
    1 celery stalk chopped
    1/4 to 1/2 cup dried mixed fruit like raisins or cranberries (optional)


    Render Bacon. Reserve fat.
    Add garlic and onion and celery to bacon fat and saute. Season with salt and pepper. Saute until onions are translucent.
    Add stock. Reduce slightly. Add bread cubes. Add carrot and gently mix. Season with salt and pepper.
    Crush bacon and add to mixture.
    Add walnuts and let mixture cool.
    Add dried fruit. Mix in the eggs until well incorporated.

    Bake in casserole at 375 uncovered until crisp on top.

    I made it once already to practice and it turns out pretty good. The walnuts and fruit measurements are approximate as I just throw these in until it looks good. I tend to experiment with stuff and this is one of those. Also, I used a lower carb whole wheat bread that has about 8 net carb grams instead of the Atkins bread which I was afraid would have a "strange" consistency.

    I bet you could take the base of this stuffing (no carrots, walnuts or fruit) and pretty much do whatever you like. Maybe if it's not a "hit" with the fam I'll add oysters or sausage next year and poultry seasonings...My grandmother was the one who suggested a fruit stuffing so I thought I would go with it.

    Dina,

    Remember to eat a good breakfast (or lunch if you eat the big meal at dinner time). You will be less tempted if you have had a good meal before leaving the house.

    Eat the best and leave the rest is my theory of getting through the day. This is my second holiday season since committing to LC for life.
