Sick of Salad

"Low Carb Newbies" at Low Carb Diet Support: "any ideas on how I can make it more interesting?? it's hard enough at worrk b/c they have such yummy Chicken strips (i work outside) I usually have grilled strips or tuna with bacon bits, ...."

Why don't you switch from salad to cooked vegetables for a while? Broccoli, spinach, eggplant, summer squash (my fave)... all good stuff.

Hi Liz. Here are links to two of my favorite recipes. They are both chock full of veggies and very good.

Broccoli/Cauliflower Salad
Broccoli Spinach Bake (I use ricotta cheese in this recipe.)

Hi Liz... are you looking for lunch veggie ideas? I do lots of chicken or ham or tuna salad... lots of chopped up celery, dill relish, and finely chopped green onions (scallions)... plenty of mayo... some celery salt. With the chicken salad, add a tsp of hot curry - excellent. With the ham salad, add a dollop of spicy mustard! With canned salmon, add a couple of tsps of dill weed, and a good squirt of fresh lemon juice...

Serve with celery sticks (as spoons) or wrapped in a romaine lettuce leaf - like a "wrap".

I was getting tired of just salad..so Ive been switching to other veggies here and there to give me a break....I made this stuff..Looks like Well...it doesnt look real good..but wow it takes real good....Its Broccoli and Cauliflower cooked till pretty soft...then I add Butter, Cheese (cheader or Mozarella) also add some cream cheese then Mash like Mashed Potatoes...WOW it is sooo good! But you really have to love Broccoli and Cauliflower to like this stuff.....Oh and if this is someones recipe HEY I tried it and its GREAT....

Hey, this ALL sounds so yummy!!! (and people tell me low-carbing is dangerous, BAH!!! )
I like to add ALL kinds of stuff to salad. Cobb salad is awesome: Greens, hard cooked egg, avocado, bacon, shredded cheese, chicken strips, bit of tomato, YUM YUM. I could never get sick of a salad like that!!!!

Barb, one thing you haven't tried... Chopped black walnuts. It only takes a little bit. Mmmmmmmm....

i like to take cold cut, cheese, boiled eggs, etc... and sometimes a salad, other times I eat the salad for dinner.
