| After taking a few months off after losing my mom, I just started back on Atkins yesterday. I remember reading something about coconut oil helping you lose weight when I was on Atkins before. I bought some - it comes in a jar and is Spectrum brand. I just don't know how to go from here. It seems sort of solid so do you just eat it, cook with it or what. Can someone please help me? Lydia |

| Lynda, I'm not sure about Spectrum Brand. I have just recently bought some Virgin coconut oil from Tropical Traditions I find that I can't get the 3 to 4 Tbls. per day they recommend for health benefits by just cooking with it so I measure out 1 1/2 T and melt it in a pan of water. (little glass ramikin set in simmering water) Then I just drink it down followed by a bite of natural peanut butter. I do this morning and afternoon. Here is another good thing to do with the natural peanut butter. When you buy it let the oil come to the top and drain it off. Now melt the same amount of coconut oil you poured off and replace it. Stir. I find it stays together much better then the peanut oil and it is better for you! Jen Atkins since 11/11/03 140/133/115 |

| I'm so sorry about your mom, Lydia. I'm not familiar with Spectrum brand either, but do make sure you bought virgin coconut oil. It should have a coconut smell and say it's virgin oil. LCE member since March 2002 |

| Lydia, (((hugs))) I use it as an oil substitute, and find that works well for me. Since I generally have scrambled eggs once a day, and use coconut oil in my salad dressing, too, I'm getting enough I think. Of course, I also use it as an after-bath moisturizer, weekly hot oil treatment for my hair, and, well, deodorant (Hey, what did you expect me to say, Brightlady I don't think I've bought Spectrum, but it's a generally respected health food manufacturer. Brighty is right that the less processing the better. Does the label say anything informative? There are also a couple of good threads in the "Everything Else" forum. If you do a search on "coconut oil" they should pop up for you.... But Jen, your peanut butter idea is absolutely fantastic, and I'm going to do that with my very next jar. Thanks!!
