A salad question

"Low Carb Newbies" at Low Carb Diet Support: "I've seen in a few posts about eating spinach instead of iceberg lettuce, what is the reason for this? Is it for the vitamins or something? 168/160/115...."

Yes, indeedy. Spinach is a great source of calcium and betacarotene. Iceberg lettuce just isn't that green. I prefer the taste of spinach and the greener lettuces over iceberg anyday.

Oh, and I wanted to add, that when I eat my salad, I add fresh steamed green beans, cauliflower, broccoli and cheese (have to have a little, lol) And I use full fat ranch dressing.

Spinach is also a great source of usable iron. The greener the better. Try a combo of iceberg, raw baby spinach and romaine in your salads, YUMMY!!!!

Ice burg is mostly water so it really don't have any nutritional factors to it! Sadly enough...it's my favorite! lol

I love that baby spinach too but at $6.00 a pound I only buy a 1/4 pound at a time and stretch it with romaine. But even a little bit tossed in a salad make sit noticeably better.

Spinach is also a great source for potassium, even more than bananas.

Ahhhhhhhh, the virtues of those little powerhouse leaves. I LOVE the firm texture of baby spinach leaves in my salads. And who doesn't love spinach salad with the bacon and a sweet and sour dressing on it. Oh yummmmy!!!!

You know I've never ACTUALLY made that salad, only eaten it at parties and stuff.Hmmmmm, let me think. I would probably use 1 cup of lite olive oil, 2 TBS. bacon grease, 3 TBS or so of Apple Cider Vinegar, and maybe 1/4 cup of Splenda. Cook the bacon all cut up first and use the grease from it. Mix all the dressing ingredients really well by shaking or whisking. I would probably use at least 3 cups of baby spinach leaves maybe more, with any stems cut off. I think you are supposed to drizzle the dressing on kinda hot, so you probably have to heat it. It's supposed to wilt some of the spinach. I am going to have to try this and see how it turns out. I think this dressing would be good on broccoli and cauliflower too. Of course, anything with bacon in it is good in my book!!!

Sounds delicious! Would you pour all the dressing on the spinach? It seems like too much oil to me for one salad. Could you add onion?
