| Hey all, I first posted on this board a week ago and got some excellent advice. I have been low carbing on no particular plan and have dropped from 218 to 209. I'm happy becuase I haven't been on a diet, I've just been picking different foods. When I'm hungry I eat, and I eat something good. My diet consists primarily meat, eggs, cheese, 2 salads a day, and little things like dill pickles, green olives, etc. My other favorite part is that my energy level is constant throughout the day. I know if I can increase my activity my energy will shoot up. I know I would take off weight faster on formal induction, but I'm happy to lose weight without having to work hard to follow a strict diet. NOW FOR THE QUESTION: I know nothing about tofu, but continually hear it's the greatest thing since sliced bread. Can anyone provide a primer for things like. What form to buy it in? Where's it in the grocery store? Different ways to prepare it? I don't even know enough to ask intelligent questions sorry. Thanks, MGSFB |

| Hi, You might get a better response if you post in the vegetarian thread...tofu is a soy product used frequently by vegetarians for a great source of protein. It is square and white in form, and is usually packaged in a plastic container with a clear film top so that you can see the product. The product itself is very dense and wet. Tofu is not simply for vegetarians. Tofu is a wonderful source of protein and we used it when I was growing up. Mom would add things to it while cooking it, and it took on whatever flavor the addition was. Example: if you cut it into cubes and cook it with ground beef, it tastes like ground beef. If you cook it with chocolate, it tastes like chocolate. Tofu is, simply put, soy curd. Read this for more info: All About Tofu Plus, a 1/4 block of Tofu has just a tad over 2 carbs. | This a really good question! I went to mongolian bbq some time back and put tofu in with it.. and it didn't tast like the rest of my dish. As a matter of fact I couldn't even eat it. I hear so many good things about it..but was disapointed when I tried it. Was it cooked wrong? Am I missing something? I would like to try it again....but i'm kinda chicken! LOL April.. that was a pretty good artical! Thanks for posting that. Do you have any really good lc tofu recipes??? After all you mentioned chocolate... that sounds interesting! | I'm with you Tanya, I am afraid to try it again. It wasn't the taste that bothered me, but the texture. However, there is a really interesting Fake-A-Roni and Cheese recipe in the recipe section that uses tofu as the noodles and it looks promising. Jen Atkins since 11/11/03 5'3" 140/129/115 I used to be indecisive...But now I'm not so sure! |

| The texture isn't much different from cottage cheese; just think about it like that. If you marinate the tofu before cooking, it's very good. Some sesame oil, ginger, garlic, etc, and it adds a lot to the dish. I actually really like tofu, but haven't had it for a while. You can also buy it in aseptic packaging and not have to refrigerate it until opened. There are different kinds of tofu, but I'm not sure if the carb count varies. Soft tofu is good for smoothies, and firm/extra firm works for cutting into cubes for stir fry, etc. |

| When I was vegetarian, I used to have it for breakfast all the time.
