Dinner Menu?

can anyone suggest a tasty menu - i can look up the recipes, etc.

Chicken Cordon Blue with a vegetable would be good. My husband loves it.

Steak with vegetables (you could make him a backed potatoe)...if you only make one than there will be none to tempt you.

You could make chili (there are low carb recipes).

If you stop and think about it the list is endless!

Have a yummy and romantic dinner!

I'd go with the steak. I love steak. And some broccoli with or without cheese, or some green beans and a big salad.
good idea about baking one potato.

you could even make that low carb cheesecake for dessert! (Not sure, but you probably still have to be careful here since you are just out of induction).

Can I come over, too?

If you like calamari, try sauteeing it with some butter, spinach and mushrooms. My husband made this for me the other day and it was fabulous.

how about chicken or shrimp curry - with rice - you don't have to eat -
saute cut up boneless chicken breast in a little olive oil (marinate meat with curry powder), add some veggies - onions, celery, bell pepper, some baby carrots cut in half lenght wise, broccoli or cauliflower, and cook till veggies are as tender as you like - if you use the shrimp, saute the veggies first - sprinkle with curry powder -
after veggies are cooked, add some chicken stock, more curry powder - the amount is a matter of taste - I like a lot - if you are doing shirmp add shirmp and some heavy cream to lighten the sauce, cook till shrimp is cook, or cream is blended - if using chicken - serve over the rice or in a bowl like a loose stew - almost soup like.
serve with either a salad or other cooked veggie.

Whatever you decide to serve, dressing up the presentation makes a big impact. Have a big fresh salad first, and I don't mean a bowl of lettuce. If it's a tossed salad, add some "fancy" toppings like sliced olives, shredded cheese, hard-boiled egg, slivered almonds. There's a spinach salad recipe on this site that's awesome, too.

Then have a beautifully-prepared piece of his favorite main dish - a perfectly cross-grilled steak, a couple of glazed chicken breasts, a big salmon filet, butterflied pork chops, whatever you both like. Serve with one or two side dishes of vegetables....asparagus? grilled onions? sauteed mushrooms? broccoli and cauliflower? Again, whatever strikes you, but make the portions generous and present them with a flair. A slice of lc cheesecake for dessert would be a nice touch, too.

Not only will your DB never miss the "starch" , he also won't fall asleep on the couch in front of the TV right after dinner.
