Well, cloud,

Canned vegetables are ok, but fresh or frozen are better. Most canned veggies are packed in liquid, and the nutrients in them are water soluble. That means that a lot of the vitamins you would have gotten from them is in the water in the can.

Your best bet is to cook fresh or frozen green beans with as little water as possible (steaming is perfect!). Try that for a while, and see if you get to like it just as much. It's really worth it, IMHO.

I agree that fresh or frozen are always a better choice for veggies health-wise and taste-wise. However my view is that at least I'm eating all my veggies, even if they are canned. For convenience and speed, I'll grab canned green beans, spinach, asparagus, etc. Better to get those veggies in that skip altogether because you don't have time to do frozen or fresh.
Wonder why they don't can broccoli or cauliflower?

brocolli or cauliflower would disinigrate into mush when they process them. And I love canned green beans straight from the can , canned spinach is good too!!

WEll, canned green beans would be way better than a bag of doritos. Fresh is best, then frozen, then canned. And canned has a ton of sodium in them. But hey, if that's your snack instead of cake or something like that, go for it.

Throw some cold green beans into your salad next time.

I've been trying to think of a way to make three bean salad. It usually has green beans, wax beans (yellow green beans), kidney beans and sometimes garbonzos. The kidney beans could be replaced by eden black soybeans. Garbonzos would have to go byebye. The sauce would be beyond my technical abilities, though -- basically a clear, thick and slightly sweet/salty/vinegary sauce.

Here's a recipe for 2 bean salad and you could add the eden black soybeans to it. I don;t know how clsoe this is to traditional 3 bean salad dressing though but It looks like it could be good.
