Hello everyone!
My name is Lauren, I'm 21 and I'm a sugar/carb addict.
This is my 2nd time on Atkins. The first time I was following this WOE I lost 20 pounds and then cheated and never got back on the plan. That was a year ago.

So I started induction on April 1st. I felt kinda wiped out for a couple of days but now I am enjoying the extra energy.

My husband is not joining me this time around so I definitely could use the support here. It's so hard seeing all of the Easter candy and goodies in the kitchen but I keep telling myself I'd rather be thin and enjoy feeling thin instead of stuffing my face with candy and enjoying it for a couple minutes. hehe.

I do have a couple questions. I am already starting to get in the habit of eating the same food everyday. I went out and picked up a large variety of meat like steaks and chicken and some fish (salmon and orange roughy) but I am clueless about how to prepare it so it has some flavor. So far I have just been pan frying stuff. I have a grill and I would love to know of some marinades or sauces that would be alright to use while on induction. That was an issue I ran into last time I was eating low carb. I flipped through a couple of LC cook books at Wal-Mart but it seemed like most of the meals were for people that weren't on induction.

Also, I read a couple posts where people were mentioning to eat a lot of vegetables. Is it okay on induction to eat some extra salad greens? I eat a lot of broccoli and asparagus and I hope that isn't bad.

HI, Lauren, welcome to lce!

Asparagus, broccoli, and salad greens are great lowcarb veggies and fine for induction. I'm sure you'll get lots more advice. I just want to say HI.

Lauren,

I'm not much of a sauce cooker -- so i cant' help ya there

but for the vegies -- i have always felt that there's no such thing as eating too many
(big salads and 2c vegies here and there wont break your WOE) I always tried to have veggies with 2 meals

Hi Lauren,
Welcome to LCE You may get more responses to your cooking questions in the cooking forum, if you want to post some questions there.
As for the salmon, I did a little *playing* in the kitchen, which I do a lot...
and came up with a salmon dish my DH and I like a lot. I get the boneless salmon filets and rinse them in cold water. Then I sprinkle on (very generously)
some garlic powder, paparika, red cayenne pepper, a touch of sea salt and some lemon pepper. Then I spray the salmon with Olive Oil spray on both sides and grill on my gas BBQ grill for about 10 min each side...depending on the thickness of the filets. I cook skin side down first and usually it comes off when I turn the salmon and I carefully put it back on the side that is now up to keep it from drying out. Then I serve it with some fresh lemon juice squeezed on, or a bit of homemade LC cocktail sauce. Very yummy...almost like a *blacken*salmon, except it's done on the grill.

Hello...I am also new. My name is Sarah and this is my second time on Atkins. The first time, I lost 60lb and have kept all but about 20 off. I still need to lose about 42 lb. I've been back on for 3 weeks and have lost 15lb. I am really excited to be back on and wonder why I ever stopped. I'm going all the way this time!

I am having one little problem- I'm eating too much cheese. I try not to but I have a hard time finding another quick snack. Any thoughts? I am going to start writing everything down- I think that might help!

Welcome! If you eat it during one of your meals try it for a snack--celery sticks, sliced or cut cucumber pieces, radishes, meat sticks, beef jerky, there are lots of choices that are LC.
