    Default Fiber ?

    So I was reading the new issue of low carb energy mag tonight and came across an article about fiber. I know that in a LC diet you don't get much fiber but the article was talking about eating legums and corn and stuff. Now im more confused than ever. I know that we need fiber but can some one tell me the best low carb way to get fiber other than having a wonderful (very missed) sandwich with two thick slices of wheat bread?

    Fiber, in and of itself, is completely low carb friendly! You certainly do NOT need legumes and corn to get a good intake of fiber.

    Raw, green, leafy veggies, are an excellent source of fiber. So are things like flax and bran.

    Many of us have found that raw, green, leafy things are so low in carbs (after DEDUCTING the fiber) that we don't count them at all. 'Course you have to count anything you add to them or put on them.

    After induction, many of us have a flax based cereal for breakfast. One can be found here.


    I'm sure other members will chime in with their own "adventures in fiber."

    Some things I LOVE that are good fiber sources: La Tortilla Factory Whole Wheat Tortillas (low carb, of course) and my protein/fiber shakes I make with unsweetened organic soymilk, CarbSolutions shake mix, psyillium husk powder and ice cubes. The fiber powder helps thicken the shake and you can get extra fiber this way without the grittiness. I buy the Kroger brand of the Metamucil type powder.
    But, basically, my fiber comes from salad, green beans, and broccoli.

    Broccoli, cauliflower, spinach (raw and cooked) are my mainstays for fiber. Soy products are chock full of fiber as are any of the low carb pastas. But vegetables should be where you get the bulk of your fiber. Had 2 cups of broccoli the other day, one cup raw with dip and one cup cooked for dinner. The total carbs were 12.5 less the fiber of 7.16 for a net of 5.34 carbs. All that for about 70 calories.

    Lots and lots of veggies. I'm sure I eat at least twice the fiber that I did before low-carbing.

    I can't imagine where anyone gets the idea that a low carb diet is low in fiber. Oh yeah those folks who don't know that we are supposed to eat lots and lots of low carb veggies that are really high in fiber. My personal favorites are, like Rob, broccoli, kale and spinach.

    I get my fiber in lots and lots and lots of spinach...just love the stuff! The DH is always asking why I'd rather make a salad with spinach than with regular lettuce...I tell him 'cuz of the fiber, and he'll reply, 'lettuce has fiber' and I'll just tell him 'yeah...but not as much as spinach!' (Spinach also makes for an excellent dessert w/ Carb Options dressing on it...

    both my SIL's I saw yesterday are nurses who are against Low CArb as a long term lifestyle--when I suggested I was eating more veggies than I ever had and had lost 60 lbs--which both could tell immediately--they reluctantly agreed that at least for the short term, that it was healthya nd probably the studies being done would show we were fine. One was shocked to find I had actually lowered my cholesterol and my blood glucose level significantly!

    My primary doctor was also surprised, too, when I got a good cholestrol test last spring. But I could tell she isn't fully convinced. She leans towards lowfat diets for controlling weight and good health. She's quite thin herself, in a way that suggests an abstemious nature.

    It was so funny. You should have seen the look of ~HORRER~ on her face when I ran into her at the candy shop one Xmas season! She clutched her box of chocloates to her chest defensively, and her eyes begged, "Don't say anything! Please don't say anything!". LOLOLOL! Like I caught her in the act! (as if!)
