Is the cauliflower raw? Perhaps if you cook it, or at least parboil it, it will digest faster and not cause as much gas?

I once developed an intolerance to apples - I'd been eating green apples daily for a long time. It got to the point where even a sip of apple juice would give me a tummy ache. So, I stopped eating apples altogether. After a while, I could eat them again with no ill effects.

Have you tried broccoflower? It's very similar to cauliflower, except it is a bit smaller and spring green in color. Then there's the romanesca cauliflower - also green, but with spiralling spikes rather than round florets - very remarkable looking!

I had trouble with that if I ate it raw before going LC, now it isn't as bad, but still happens occasionally. . .I find that if I eat it with something else it doesn't have as big an effect too.

Lou - As Teelbee says try parboiling it. I often do that when I make crudites out of broccoli cauliflower and baby carrots. I find 2 to 3 minutes of boiling and then plunging the veggies in ice water makes them mpre digestible and they still have a lot of raw crunch left. The trick is to get the boiling time down to what works for you.

One of the difficulties for me in trying to get enough veggies in is that I get terrible indigestion from both broccoli and cauliflower. I fixed the "fauxtatoes" when the recipe first came out, ate most of it, and was so sick I had to stay in bed the next day! Bummer! I'm also very reactive to iceberg lettuce! Can you believe that?? But I can eat Romaine and other kinds of lettuce. I can't eat onions at all.
