| Sheyla, I'll take a crack at this...perhaps a fellow LCer vegetarian will help us out here...but I think a typical day might look like this:(if NOT vegan) and bear in mind I an NOT a dietician... breakfast: scrammbled eggs with veggies like mushrooms, peppers, cheddar cheese a small serving of a low glycemic fruit like perhaps 1/4 of an apple or jicama, or some berries such as strawberries, black or blue berries. lunch: vegetable soup with a tomato base and lots of veggies such as cabbage, cauli, onions, zucchini, etc; perhaps a grilled cheese *sandwich* of 1 slice whole grain bread with 2 oz of cheese, and again, a small piece of a low GI fruit. Dinner: Tofu veggie stir fry...be creative...lots of assorted veggies, a large tossed salad with olive oil/vinegar dressing, berries/cream for dessert. The Zone is also an excellent read for a diabetic. I would also reccomend a nutritional info type book with glycemic values of foods. Also, a consultation with a dietician would be most important, IMO. HTH Shelley

| Sheyla - I happened to be rereading The Schwarzbein Principle at the moment and came upon the section on vegetarian menus. She has 28 days of "acceptable" vegetarian menus listed. Eggs, cottage cheese, tofu. low carb breads and brown rice and other whole grains figure prominently in her suggestions. I've also heard her vegetarian cookbook is quite good. I know her regular Non-vegetarian cookbook is excellent, I have it.

| ALSO, get him a copy of The Perricone Promise by Dr. Nicholas Perricone!!!!! The book is about taking 10 years off your looks, but it has REAL promise for just getting plain old healthy!!!!! He really pushes natural, plant-based foods. The meat he highly recommends most is wild salmon. But the rest of it can be adapted to a vegan lifestyle!!!!! I sure hope your brother can get this under control!!!!!! One of the foods I'm excited about that he talks about is BARLEY!!!!! It seems like a wonderful SUPERfood!!!! I'm going to add it back to my menues.
