| I'm out of (re) induction now, and trying to add carbs in 5 gram increments. In fact, trying to do the program more precisely this time around, so I might finally figure out my CCLL, or whatever the acronym is. With the concept of net carbs, it's remarkable how much FOOD I seem to be eating, trying to get the count up to a mere 30 gms. Today my legal carb count includes mixed berries, pecans, salad greens, red onions, broccoli, cauliflower, summer squash, and ripe olives. Who says Atkins means no veggies? Not us! |

| I've become a salad freak, when before I'd have one rarely and then the mandarin chicken salad from wendy's. Now I love salads and have recently begun adding them daily like I use to when I first started this WOE. My freezer is full of bag of frozen veggie, mostly brussel sprouts, and I've recently discovered the joy of mashed fauxtatoes. I can't wait until the cauliflower goes back on sale...I got the last stuff for 88 cents a head! I'm gonna eat it until I get sick of it...which shouldn't happen if my brussel sprout obsession is any indication (I could eat them every night). I applaud you for going back to basics. Sounds like you're doing well. Three pounds down already.

| i had forgotten how much i like brussel sprouts *L*... i bought a bag of green giant and steamed still just done.. still nice and bright pretty green and a bit firm..(hate those nasty greylooking mushy crap kind..) tossed a sprinkle of cheddar cheese grated on the plate... plopped the sprouts on... and instantly the cheese melted.. and i just swirled em about to get that yummy cheese on them..SAVED me from having to make a cheese sauce..or buy one... talk about LAZY in the kitchen... thats me all the way..*L* |

| Hmm. I have never had a brussel sprout in my life. May be time to expand my vegetable horizon! Gotta try spaghetti squash, too. And I thought I was doing good adding cauliflower!

| Barb - It is so true. My ccll was between 40 and 50 at one point and if I didn't add in a slice of low carb bread and something like yogurt or cottage cheese, I would have a hard time reaching 40. Good idea Kim, I'm a charter member of the lazy cooks club. |

| Cauliflower isn't my favorite vegetable. But last night, I made the Mashed Fauxtatoes from the recipe on this site. That's a fabulous dish, and really easy. As a recovering potato addict, this substitute actually does it for me. What a break! I learned to hate brussels sprouts from the mushy school cafeteria kind. When you mention crispy steamed fresh ones, with butter and/or cheese, they begin to sound positively delicious! I also like cabbage cooked. Throw a quarter cabbage, chopped, into a microwave dish. I like to add pieces of "instant bacon" (the precooked frozen type) a little butter, maybe a spritz of seasoned salt, a splash of water. Cover and zap for a short time (texture to taste), stir, and eat. That's your basic lazy cook recipe! I have missed yogurt, and now can start adding back some YoplaitUltra low-carb type a couple of times a week. Last edited by bkloots; 01-21-2005 at 11:43 AM. |
