Default Let's have a thread about Flaxseed Cereals

I've just been reading the thread about "annoying low-fatters," and find that there's a good discussion of Flaxseed, in combination with other ingredients, as a great cereal alternative.

I invite everyone to visit the recipes and find Maggie's Cereal, and then post your own recipe here!

To my way of thinking, almost daily consumption of my flaxseed/wheat bran/protein concoction has been a huge help in my current success with continuing weight loss, and no stalling. Getting as much fiber as possible, with the least carb count, works really well to keep things moving, as it were. My digestive system is functioning properly for the first time in my life. Let's hear it for fiber!

We have discovered the Low Carb Success brand FlaxOMeal cereals and now have it on the weekends for breakfast. It is so nice to use a spoon for something finally It does do wonders for the digestion and is delicious! We have the butter pecan flavor. It is expensive, although they do have it on sale at Netrition.com right now. I do want to try Maggie's cereal--I know it would be a lot cheaper. Best part is, it's only 2 net carbs!

As far as topping the cereal, we were just using splenda and heavy cream. In an effort to cut calories a bit, we tried fat free carb countdown beverage. It's all right...we know cream, and thats no cream! But, we are mixing it half and half with the cream, and that is doable. Last weekend, we had some blueberries so threw those in to. What a delicious treat!

Here's what I wrote in that other thread:

So MY basic recipe might go like this:
2TBS. Flaxmeal (Bob's Redmill is most readily available at most grocery stores.)
2 TBS. Almond flour
2 TBS. Wheat Germ (Krechmer's is good) - Optional
2 TBS. other nuts, - sometimes - ground (Pecans, Walnuts, Macadamias, Sunflower, etc.)
1 scoop of Carb Solutions Protein mix. - Optional
1 cup HOT water....or more if necessary...add a little at a time until it's the consistency you like.
2 TBS. s/f syrup (strawberry, blueberry, vanilla, etc.)
1/8 tsp. Stevia (can get at health food stores........a pinch goes a loooong way!!!)
1-2 packets of Splenda
TEENY pinch of salt

Mix that all up. Add a little more hot water if necessary or to get the consistency you like. Stir in the cream or half and half. YUM!!!!

I have also added a TBS of flaxoil to it after it cools down a bit. I wait until it's cooled off so the heat won't destroy the omegas in the oil.

This is VERY filling!!!!!

In response to Maxibee:
I suppose the chocolate shake mix might be fine, and you might want to add a TBS. of cocoa powder and a bit more sweetener to make it more chocolaty. Do you remember chocolate Maypo?? or something like that. It was chocolate flavored cream of wheat. I haven't actually tried doing that, but I have thought about it.

You don't HAVE to use wheat germ in this recipe. I just use it to add more fiber. I don't always use it, and it tastes fine without it. You may want to add an extra TBS. of almond flour or flax to increase the amount. But try making it without it first and see if it makes enough to satisfy your appetite. It's especially good with a bit of ground up sunflower seeds thrown in..........gives it a REALLY nice, nutty flavor. I've also made this cereal without the protein powder mix too.......work just fine. I just might decrease the liquid amount a little and just keep adding hot water until it's the consistency you like.

After you are done with induction you can also add 1/2 cup or so of berries........adds a delightful flavor!!!!

I'll have to sit and figure out the carb count on this.

if you like oatmeal at ALL..try maggies cereal... its REALLY really REALLY good.... if you give it half a chance... it just MAY become your favorite thing to eat..:-)

Okay I have a question about this.... I bought the Whole Ground Flaxseed, the Wheat Bran and then I found something called Thicken Thin Not/Cereal thickener. Says for lowcarb hot breakfast cereals. Is that what I use? Or do I just use the Carb Options Milkshake stuff? I am confused :(

If the Carb Options milk shake stuff has soy protein isolate in it, you can use that as the regular SPI. I would say if you make it too thin...........then you could thicken it with the ThickNThin/CerealThickener. ThickNThin is a plant gum based thickener, NOT Soy Protein Isolate, you will get different results if you use EITHER, but not both. I like putting the protein shake mixes in because it tastes better to me and that is what I have on hand.

Anyone else who has Atkins Bake Mix, could also use that in place of SPI. But I prefer the FLAVOR of the shake mixes.

Does that make sense???

And if you don't make the WHOLE batch of Maggie's recipe, just make sure you use equal proportions of each of the ingredients.

For those of you on induction, after that is over, you can start adding berries to the cereal for a nice flavor kick. It has lots of options for springboarding different flavors too. I played around with it and came up with the recipe I posted above. I like to experiment and try different things. And if it turns out, I write down what I did, so I can repeat it.

Since this cereal is so full of fiber, I make sure I drink 8 oz. of water with it to help it get through my digestive tract more easily.

Thanks everyone for all the information and links. For anyone on LC, this fiber bonus is a real benefit, and much more satisfying in every way than supplements like Metamucil. (Footnote: I hate that commercial where the woman wheels grocery carts filled with broccoli and milk past the display of Metamucil--and is encouraged to choose the pill. Aaack.)

Don't forget that you can also sprinkle flaxseed on salads, or stir it into low-carb shakes and yogurts.

Sometimes I make the flaxseed/wheat bran cereal without the protein mix, and eat it along with eggs and bacon for a BIG breakfast.

After having the cereal a couple of times. I dicided to add a few more ingridents and bake it into muffins. I can eat the cereal but I wasnt crazy about it. But the muffins turned out really well. I'll have to be careful though, I can eat them every day and the carb count is a little higher than I want to spend on breakfast.

whaaaaaaaaaaaaaaat? i could have used the ATKINS BAKE MIX???? no WAAAAAAAAAAAAAY barb! i have had THAT sitting in my cupboard all along! oh man.... :-( is it nasty tasting in the cereal? hmmmmm well... when my protein runs out i GUESS i could use it.. ... but i thought it was mainly flour with baking powder..*sigh*.. guess i never read the ingredients.... might just have to DO that eh? *L*..bought it when i first started LCing... along with a bazillion OTHER things that i never used..*L*... i finally bought some wheat gluten stuff the other day when i saw it at walmart... but i have NO CLUE what i may ever use IT for..*L*

Kim, I know you don't like mock danish, but if you use that as a base and add other things, you can make a pretty close imitation of real cake. Try this:
Add to the basic Mock Danish recipe 1) 2 TBS. almond flour 2) 1 TSP. baking powder 3) 2 TBS. flaxmeal 4) 1 tsp. Wheat Gluten 5) 1 TBS. Atkins Bake Mix. 6) extra sweetener 7) a dash of vanilla. Cook that in a pretty deep dish OR a largish flat dish in the mic for about 3-5 mins. (Keep an eye on it.) This can be doubled or tripled to make a cake for more than one person. I'm making a cake today like this for my grandson's b-day cake today. He is hyper sensitive to sugar, which sends him climbing the walls (ADHD) so I refuse to feed him sugar and junk. He's getting a lowcarb b-day dinner here too.

As for the flaxmeal cereal, you don't HAVE to put in protein isolate, it helps give it body. If you can find ANY of the "isolates" you could use any of them. Milk and egg is a milk isolate. There are shake mixes out there that are WHEY protein isolates too. IF you leave out the "isolates" you can sub with almond flour. I've done that before and it turns out just fine. And it's even better if you add a few frozen strawberries and a dash of strawberry s/f syrup.

You can also grind up pecans or walnuts and put some of that in too. I always toast those nuts in the oven for 5 mins or so before putting them into the cereal. I just let them cool off before adding them. It's a very forgiving recipe.

And don't forget about cinnamon, if you like that............that adds a nice flavor variation to the cereal. OR you can do the traditional pumpkin pie spices in it too. I like to "PLAY" with my food!!!!

Betty, you are so very right. This also makes a good base for muffins. I use the ingredients for my "cake" and for the cereal, which makes a good batter for muffins. I increase the amount of Atkins Bake Mix. The only caution I would say about muffins is to SPRAY muffin tins or papers with PAM first!!! They tend to stick to the liners or muffin tin. George Stella dusts his baking containers with soy flour, so you could do that with the bake mix too.

Better go make cake....................
