    Default Lunch choices?

    Hi all,

    My normal practice througout induction, OWL and now in pre-maintenance (yay!) has been to bring tuna fish with mayo for lunch at work M-F. It's easy and quick to prepare. However, I just read an interesting article on mercury levels in fish that made me want to mix it up somewhat.

    What do those of you that pack your lunch bring to eat? I'm looking for easy, simple ideas. My only rule is that it can't require cooking at work, the most I have available is a microwave and that is often busy to use.

    I take lunch daily...but I also use a microwave as I take a lot of leftovers from the night before. Some things I have taken that don't require warming up have been salads, cold grilled chicken that I've sliced up, lunchmeat/cheeses, cut up veggies w/salad dressing.

    Hope this helps I take my lunch daily and have found I no longer even look to see what's available from our kitchen.

    It's usually a salad for me..... with some type of leftover meat from the night before, usually chicken. I also do some egg salad, but when I do, just like with my tuna salad, I never use more than a tablespoon of mayo since induction. However, I am watching my calories as well as my carbs as I have found I will not loose weight if my calories go up over 1600, no matter how closely I watch the carbs. However, at 5'9" and 160, I probably only have another 20 pounds to loose or I won't be able to loose any more and still remain healthy.... and that is most important. So, at this time, it is more difficult for me to lose weight unless I control the calorie count.

    My non-micro lunch choices are:
    sliced meat and cheese;
    salad, usually with some cheese and meat, lots of veggies;
    chicken salad;
    chopped veggies and dip, sometimes with cubed cheese;
    roll ups, with lc tortillas, dark green lettuce leaves, cheese (do we see a trend here?) and sliced meat with either salad dressing or mayo

    cold left-over chicken is good as well!

    I used to like to make a spinach "bread" sandwich: two slices of spinach bread, mayo, mustard and sliced beef, ham, or cheese. If you can get in the queque for the microwave, you can bring some zucchini or summer squash and nuke it until tender, then lay a slice or two of cheese and nuke for another 10 - 15 secons. Left over cold chicken and a salad makes a wonderful lunch. Peanut butter and celery was good for days when I just had no time to think about food.

    I haven't brought my lunch to work in years but if you liked tuna salad enough to eat it so often try canned chicken and add mayo. Hard boiled eggs for egg salad etc.

    If you really like tuna and wish to continue eating tuna salad, try canned salmon instead. Canned salmon is usually WILD salmon and so is much healthier for you. I find it also tastes more like tuna than salmon so it makes excellent "salad" for lunches and such.

    i make a big salad in tupperware, pack the dressing seperately, and then put it on when time to eat. I have cheese, turkey, chicken, nuts or HB eggs for snacks. Its the same thing every day but that works for me.

    I've forgotten that canned salmon is wild, thanks.

    Your post reminded me of canned mackerel, which I haven't used in a few years. Once you pick the bones and skin bits out, is it's nearly indistinguishable from canned tuna. OK, eagle eyed children might be able to spot the difference - but honestly, if you've never tried canned mackerel before, you'd be surprised how similar it is.

    Cabbage leaf roll-ups make a good lunch. Take a broad leaf of cabbage - I prefer Napa cabbage for it's mild flavor and "rollability" - then spread with peanut butter, or cheese slices, or mayo, mustard and cold cuts, egg salad, etc. Roll it up (lengthwise seems to work better with Napa cabbage), and it makes a good "fingerfood" lunch.

    I pack lunch and breakfast everyday....
    Lunch is usually left overs, and I will take ahead of lettuce with me, tomatoes, cukes, what ever I have in the fridge for salads to go with whatever meat leftovers I have. Sunday I usually get my weekly food ready to cart to work:
    For breakfast I usually take hard boiled eggs, and mayo and some other protien - smokes, ham, sausage (cooked)
    Sometimes I take some lc tortillas and salsa to make egg tacos...
    (last night I scrambled some eggs with owens sausage and cheese and brought that with some lc tortillas for tacos this week)
    If there isn't any left overs, I have tuna in my desk draw and can always open a can of that and I keep mayo in my ref drawer (I took over one of the veggie bins in the community fridge at work - i keep salsa, mayo, cheese, lemon juice, ranch dressing, sometimes peperocinni peppers, sometimes artichoke hearts, tomatoes, lettuce, etc.... - you get the picture)
    If I don't bring lunch, I can go to any one of a dozen places for salads (being on a college campus for work helps out with options.)
