"Separable fat" Red meats like beef have a quality called "marbling." That means fat is mixed in with the muscle or lean parts of the meat. You can't cut it away. The higher quality the beef (more expensive) the more marbling there is. That makes the meat tender.
Separable fat is the fat you can see around the outsides of the cut of meat. You can cut this off before or after you cook it.
Chicken and pork also have portions of fat you can see and cut off.
In the early stages of Atkins, you don't need to worry too much about fat. Eating fat helps you feel full and satisfied, and keeps you from feeling hungry. In fact, a reasonable amount of healthy fat--especially in the form of olive oil and similar oils--is good for you. Some days, the fat percentage of my total daily eating is as much as 60-65%.
As you learn how the plan works best for you, you can adjust your fat calories along with protein and carbohydrates to achieve a healthy balance.
