I just copied a recipe out of the Community Recipes that looks easy and delicious. Here it is:

Ranch Spinach
Hits: 5003 | Votes: 1 | Rating: 10 out of 10
1 16oz bag frozen spinach
1/2 cup ranch salad dressing
2 eggs
2 tablespoons parmesean cheese
1/2 cup grated cheese of choice
pepper & nutmeg to taste

Spinach: heat in a pan just enough to defrost and drain well Mix together all ingredients and bake in a Pam sprayed cassarole dish for 20 min at 375. Small amount of carbs and good enough for company.

Taco Salad... I love it.

Cooked ground beef with taco seasoning
Lettuce
Sourcream
Hot Sauce
Grated Cheese
Avocado
Tomato
Black Olives
Mix it all together... good stuff.

It's getting hot here, so I've been eating more salads. Here's my latest favorite:

Veggie Slaw

Chop fairly small: cabbage, broccoli and cauliflower

Dressing: mayo, apple cider vinegar, and splenda to taste.

Mix together. Keeps in fridge so well without getting soggy. For protein, I add some chopped hardboiled egg or leftover meat. Sometimes also add chopped nuts and/or grated cheese. Whatever sounds good.

We are having pizza and a salad. Here is the recipe for the pizza that I found when I first started this WOE and which my non-low carb spouse loves:

Pizza

4 oz cream cheese
3 eggs
1/3 cup heavy cream
? cup parmesan cheese
? t oregano
? t garlic powder
2 cups shredded cheese (mozzarella, pepper jack, provolone, or combination)
? cup of your favorite low carb pizza sauce. (Some commercial marinara sauces have as few as 5 net grams of carb per ? cup and will work well, or make your own.)
1 cup mozzarella
Favorite toppings.

Preheat oven to 375 degrees. Beat eggs and cream cheese until smooth, add cream, parmesan cheese, oregano, and garlic powder and mix well. Spray a 9x13 casserole with non-stick cooking spray, spread shredded cheese over the dish and then pour the egg mixture into the dish. Bake at 375 for about 30 minutes until the top is lightly browned. Remove from oven and let stand for 5 minutes. Spread sauce over the top, sprinkle with shredded mozzarella and apply your favorite low carb toppings. ( Any meat toppings should be cooked or ready to eat before adding to the pizza.) Sprinkle additional parmesan cheese on top and return to the oven until bubbly and brown (about 10 minutes). Remove from oven, let stand for 10 minutes before cutting.

Excluding the toppings, the whole pizza has 16 carbs. A serving of 1/4th of the pizza will have 4 carbs plus the toppings.
I put ground sausage or ground beef,sauteed mushrooms,onions, and green peppers, and sliced ripe olives.

I was in a hurry, so I slapped together an omelette, stuffed with avocado slices, some chunky salsa and grated sharp cheddar. ... oh, yeah, and some cole slaw on the side, since it was leftover and required no prep.

salmon filet (from costco..7 per bag.. about 12 bucks ) grilled with cajun spices on the george foreman grill... also grilled at same time.. yellow squash and zucchini slices... iced green tea...

i marinated the squash and zucchini slices in LC italian dressing for about a half hour before cooking...

this whole dinner took literally MINUTES to throw together... and was it ever YUMMY! i have the really really big george foreman grill... plenty of room for a ton of veggies and the salmon all at the same time...

Do you put any kind of dressing on it? Or just use the salsa and sour cream as a dressing as it mixes through?

Pepperoncini Beef
Ingredients:
2 to 3 pounds boneless chuck pot roast
1 cup pepperoncini peppers, with the vinegar they're packed in
1/2 medium onion, chopped
Guar or xanthan
Salt and Pepper

Directions:
Place the beef in the slow cooker, pour the pepperoncini on top, and strew the onion over that.

Put on the lid, set the slow cooker to low, and cook for eight hours.

When done, fish out the meat, put it on a platter, and use a slotted spoon to fish out the peppers and pile them on top of the roast.

Thicken the juices in the pot with the guar or xanthan, salt and pepper to taste and serve with the roast.

Yield: Assuming a 2-pound roast, this will yield six servings, (unless you go OVERBOARD eating it.... like me )each with three grams of carbohydrates, a trace of fiber and 24 grams of protein.
