| I love eggs, and like many others on these forums I find that I lost better when eating more eggs. I really do try and eat them in all manners but my favourite is still boiled! However, recently I have been eating a lot of pickled eggs and I just wanted to recommend them. I like them as a snack on their own but they are soo very good in salads too, especially if you are watching your calories like me as when I add pickled eggs to salads I can do away with any dressing. Are there any other pickled egg lovers out there?

| Been a very long time since I have had pickled eggs...... May have to introduce them again into my menu. How do you pickle yours? |

| Hee hee I am buy them already pickled at a local shop. They use organic farm eggs and although a bit pricey they are very very good. I might have a go at pickling my own but until they are ready I am going to carry on buying them as I really have an urge for them right this week.

| We had a long thread on pickled eggs at one time. I think, however, it was on "the board before last." (We had a couple of board changes at one time. They are a great snack and everyone had a different way of making them.

| Eggs have always been my favorite. Love them scrambled with cream and cheddar cheese mixed in. Recently I have been limiting the cheese for calorie reasons however...

| I have not made pickled eggs for about 25 years. I will have to see if I still have my recipe, which did involve the juice from canned jalepenos. Pickled eggs are easy to make. I googled pickled egg recipes and refreshed my memory. Typically, the peeled eggs marinate in your choice of pickling brine for 1-2 weeks before eating. My recollection is the longer they marinated, the better they got. |

| pickling brine? and the brine keeps the egg from spoiling...correct? |

| That is correct. I can remember, as a child, my father taking me into a neighborhood bar and marveling at the jars of pickled eggs, pickled pigs feet and picked sausage on the back of the bar, all unrefrigerated of course. I did make pickled eggs once using beet juice and my recipe for pickled beets. The eggs were a nice red color. However, because of the sugar in the brine, I decided to keep them refrigerated. Now that I think about that, I may have to make another batch of those but use liquid splenda instead of the sugar. |
