"Ongoing Weight Loss" at Low Carb Diet Support: "Does anyone know the carb count for poblano peppers? (Hope I spelled that right!):-) Found a delicious recipe for them but can't seem to find the carb count!...."

Does anyone know the carb count for poblano peppers? (Hope I spelled that right!):-) Found a delicious recipe for them but can't seem to find the carb count!

Rhonda - I couldn't find anything specific to poblano chili peppers but there were a few sources for general chili pepper nutritional analysis. They listed carbs as 2 and fiber as 2. That was for a 46g serving. Don't ask me why 46 grams. That's about 1.7 ounces. To be on the safe side you could use 1 carb per serving.

Thanks for the info Rob! My recipe is for rotisserie chicken and monterrey jack cheese stuffed poblano peppers wrapped with bacon. So, I guess I would be safe counting a WHOLE pepper as 2 carbs? What do you think?

I'd say 2 would more than cover it. But I always like to err on the side of caution. That recipe sounds wonderful by the way. Let us know how it comes out.

I will let you know when I make it. I cooked some today by stuffing them with grated cheese, rolling in a lightly salted egg white meringue, and frying in canola oil and drained on paper towels. It was really good but I might add a little almond or soy flour to the meringue next time!
