Talking Need help with Owl!

Hi: My name is Susan and I have been on Atkins since 01May2005 (25 lbs). Am doing not too bad having lost 45lbs total since 01Jan05. Now I need to make changes and incorporate new things and find new things to eat. I would like some suggestions on things for breakfast other than eggs and bacon w/low-carb toast. Anyone out there have some? I have an allergy to milk products so try to stay away from milk and cereal. I don't have much time to prepare things as I go to work early. I only have time to cook some bacon & microwave an egg. Maybe a total time for preparation of 20 mins. I tried a wrap one morning but can't say that it thrilled me. It's the texture. I might like it toasted until it was real crispy and then spread with something. Any ideas. Thanks for any info!

Welcome Susan. One thing I do for a "grab n go" breakfast is to make what I call a "Deviled egg roll" the night before. I scramble 2 eggs and pour into a 9" non-stick skillet & cook until the top is almost set. Then flip it over to finish cooking. I let it cool on a paper towel and coat it with a mixture of mayo and mustard to taste. I sprinkle some chopped green onion and splenda sweetened pickle relish or chopped jalepenos, depending on the mood I'm in, and roll it up like a jelly roll and wrap it in plastic wrap and refrigerate overnight. In the morning, I can just take it from the refrigerator and eat it on the go if necessary. I find them to be very filling.

Susan: What about mock danish, or a lc zuccini muffin or even an omelet or leftovers from dinner the night before?

This is one of my all time favorite breakfast recipes. Bake ahead of time, and they even freeze well if double wrapped. Take one or two out of the freezer, microwave and you are good to go. Also check out some of the other*community* recipes in the cooking section.

Maggie's Breakfast Cereal is excelent. Tastes great (even better with some stevia and Davinci's syrup) and is very healthy (12 grams of fiber and omega 3s from the flax) as well. I usually have 2-3 bowls a day.

Down sides: you have to get the ingredients from a health food store such as Trader Joes, and it is not that filling - I usually have it with eggs to fill me up.

I have found the best thing for me for breakfast is a hard boiled egg. Somehow it just seems to fill me up more than anything else with no hunger a few hours later. But I do vary what I eat with the egg. Red peppers, green peppers, celery with a smear of natural peanut butter or other nut butter, a flax muffin, small bowl of flax cereal, bacon, left over LC waffle . . . you get the idea.

Shelley, I just checked out that recipe you linked to. Sounds great!!!

Hi
Breakfast or any time of day really.- (Sometimes I think we get stuck into somethings must be eaten as a certain type of meal rut)

Try, a Smoked salmon slice or two if your hungry)- each cut into about 1/2 inch strips, layed over two desert spoons of low carb cream cheese with chives.(or Boursin, Rondele etc) Two slices of Cucumber- from the fridge, two wedges of small tomato and a wedge of fresh lemon to squirt over the fish etc. Salt n pepper to taste.

Fresh and yummy.

If you don't want cheese, replacing it with scramble eggs (eggs again i know) make a good second choice.

I'll post a piccy next time I make it.

Wow Girls: What a great response. Thanks girls. You have inspired me to go out and purchase a few things and have them on hand and give them a try. I am looking forward to trying out the muffins and the cereal. I will let you know how I like it. This morning I ended up having a tortilla toasted with 2 scrambled eggs done in the micro and 3 pieces of bacon with low-carb ketchup. Not too bad. I certainly liked the texture better than uncooked. I might even try on the week-end the French Toast Pancakes for something different. I will have to try the health food store and see if I can get some bake mix. Thanks again. Susan

I've like stuffed celery for a quick breakfast or lunch. I just stuff the celery ribs with peanut butter or cheddar cheese. It's quick; and you can make them ahead of time and store in the refrigerator, ready for grab-and-go meals.
