| Hi All, I need some suggestions for portable breakfast options. I have a hard time getting up for work as it is. So getting up earlier to cook or mix any kind of breakfast is out of the question. I am also a tremendously lazy cook and I have not bothered to go out and purchase flax, protein powder or anything like that, if it is not readily available I am not going to look hard for it... call me a lazy LCer if you must but I do just fine. I need to know what portable breakfast options you are using... please dont suggest non-breakfast foods... i am already doing that.. precooked meatballs &/or sausage links that I can microwave... left over meat and what not from the night before... I tried some Schwans omlets but they were awful. I bought some atkins morning start cereal and hood milk just for a change of pace(which was kind of yucky but it will just take time to get used to)... I miss being able to just grab a donut and go... I dont miss the donut just having that kind of ready option. Any other thoughts? Heidi p.s. I almost hesitate to post this as I know I am going to get the 90% of your diet should remain protien veggies etc... I am fully aware of that and I thank you for your on going support. Truely... |

| When I know that I will need what I call a "grab-n-go" breakfast, I make something that I call a "Deviled Egg Roll". I beat 2 eggs, pour into a small skillet sprayed with Pam, and cook until the top is set, then turn over and cook until done. Remove from the skillet and let cool slightly on paper towel. In a small bowl, mix a combination of mayonaise and mustard, in proportions to suit your taste, and then spread this over the egg. Sprinkle the coated egg with your favorite combination of green onion, splenda sweetened pickle relish, or chopped jalepenos, (or just leave plain), then roll the egg up like a jelly roll, wrap in plastic wrap, and refrigerate until ready to "grab-n-go". These keep for several days, so you can make several at one time.

| Sometimes, though they can't really be eaten on the road, I have a few sliced strawberries or some blueberries with heavy cream and splenda. Very tasty. How about some sliced cantaloupe? No cooking needed!

| Missing donuts? How about a lovely LC muffin instead? There are lots of good muffin recipes out there - you could make up a batch on the weekends for use all week. Or, here's a quickie, single serving muffin recipe. You cook it in the mixing cup, so there's little cleanup. You can buy almond meal quite reasonably at Trader Joes. Regular grocery stores in my area carry Bob's Red Mill Almond flour, but it is often pricy compared to TJ's. Code: Microwave Minute Muffin
In a tea cup,
Melt 1 or 2 tsp of butter (microwave for 5-10 seconds*)
Mix in 1/4 cup of almond meal
1/4 tsp of baking powder
1 egg
Sweetener to taste (i.e., 1-2 packets of Splenda or 1 TBS of SF syrup)
Microwave on high for 1 minute*
Turn out and let cool
The muffin may look kind of wet at first, but it dries quickly as it cools.
Eat warm with butter or wrap cooled muffin in plastic to eat later.
*cooking time may vary depending on your microwave, avoid overcooking
I also like celery stuffed with peanut butter or cheese for an on-the-go meal.

| These are some egg/cheese/veggie muffin kinda things that I make for DH to eat on the days that I work since I have to leave way before he gets up, and he won't cook for himself in the morning. 6 eggs 10 oz pkg spinach (thawed and drained) 1/2 cup sliced mushrooms 1/2 cup shredded cheddar 1/2 cup shredded mozzarella 1/2 cup ricotta cheese 1 tbsp minced onion (I use the dried stuff) salt and pepper (I just sprinkle some on the batter) Preheat oven to 350, spray muffin tins with nonstick spray Beat the ricotta cheese, add the eggs, and beat until combined. Dump in everything else and stir to combine well. Spoon into muffin tins and bake for 20-25 minutes. Even my 4 year-old likes these, and we have to hide them or he will eat them all.

| Heidi, me too. I found some Jimmy Dean Omlettes that I think are really good. They are 5 carbs, and micro in a couple minutes. Granted, I know we are all trying to stay away from processed food, but they really work when you don't have time or energy to cook something.

| I buy Hormel/Kirkland pre-cooked frozen bacon at Costco. 15-25 seconds in the microwave. How fast is that? Grab a hard-boiled egg--dip in ranch dressing. |

| I take food to work for breakfast, I usually hard boil eggs, or scramble a bunch... you can also get lc tortillas and make a batch of taco (cook some sausage or bacon, scramble some eggs, add some cheese and hot sauce, and put in tortillas) then freeze them. Grab micro wave and go... great...

| When I read teelbee's recipe and saw how easy it was, I had to try it. I added some cinnamon but, otherwise, followed the recipe exactly. I really loved it so much i had it again for breakfast today. It's only about 250 calories but it filled me. So much so in fact that today i forgot to eat lunch until about 2:00. So Thanks Teel! |

| Rob, I'm glad you liked the muffin recipe. I need to try adding a dash of cinnamon - that sounds so good. DH isn't LC, but he likes the microwave muffins, too. Sometimes, I use 50/50 almond meal and flaxseed meal for more fiber and omega-3 essential fatty acid. But, lazy soul that I am, mostly I like the easy cleanup - just throw the teacup and mixing fork in dishwasher.
