not sure if this is the right place for this thread or not...
but i figured you low carb experts could help me!
i've known for awhile about the benefits of flax meal. i recently started using it again & i have noticed the scale moving in the right direction. i was also told by my neighbor about the benefits of coconut oil. so i did a little research on it & have started using it. it may sound gross, but i eat a huge spoonful a day. i don't know if it's the flax or the coconut oil (or both), but i am down a pant size and i have lost 20 lbs (no kidding!) in the last month. i broke a plateau that lasted three months. i have upped my activity level too, & i know that helped as well.
any ideas on either of these? i'd love to hear about your experiences or thoughts.

Hey, Jess.

Probably both have helped.

Flax meal is composed of beneficial fat (omega oils) and LOTS of fiber. Coconut oil also seems to have a good effect on metabolism. I use both, although I'll admit that I don't use coconut oil except as an ingredient in various recipes, such as certain curries and my "German's chocolate cake" version of the 3 minute chocolate cake.

I've been using coconut oil to do most of my frying and sauteeing since going back on this WOE the beginning of September. I love it, and plan to keep using it since it seems to make everything brown up so much nicer.

I did get some flax seed meal (I like it as cereal), but I haven't gotten any protein powder yet, so I haven't started incorporating it. Note to self - get protein powder!

I know that the flax seed has really helped me in the past, and I'm interested to see how it will come along with the added benefit of the coconut oil.

i love the coconut oil. it's weird to eat it by itself, i know, but i've been doing some weird things since i started this WOE! ha! and the flax meal is just plain good. weighed myself this morning & i'm down another two pounds! something IS working, i cannot deny that! i have to mention that i'm also drinking green tea, at least 2 cups a day. must give credit where credit is due!

Hmmm... I have coconut oil, but I rarely remember to use it (except for making Kumu's LC chocolate candy, which I don't do that often... too tempting).

I often make a 1-Minute Muffin* for breakfast using either all flaxseed meal or flax mixed with with almond meal or protein power. I think I'll start using coconut oil instead of butter in the muffin. That way, I'd get the goodness of both flaxseed and coconut oil in one dish.

Eating coconut oil plain? That's pretty hardcore! I think I'd rather have those fat calories enhancing some other food. Although, now that I think about it -- I must admit I'm not adverse to eating a spoonful of peanut butter. so maybe it's the same kind of thing.
Code:
1-Minute Muffin

In a tea cup,

Melt    1 or 2 tsp of butter or coconut oil (microwave for 5-10 seconds*)
Mix in  1/4 cup of flaxseed meal (and/or mix with almond meal, protein powder)
        1/4 tsp of baking powder
        1 egg
        Sweetener to taste (i.e., 1-2 packets of Splenda or 1 TBS of SF syrup)
Microwave on high for 1 minute* 
Turn out and let cool 

The muffin may look kind of wet at first, but it dries quickly as it cools.
Eat warm with butter or wrap cooled muffin in plastic to eat later. 

*cooking time may vary depending on your microwave, avoid overcooking

I love flax seed and have a bit of that every day. Does anyone here have Lecithin granules? (Less than 1g of total carbohydrates for 1 T for the Solaray brand.) I include this in my Mock Pumpkin Cheesecake treat every night, and it adds a nice, nutty little taste.

I'll have to look for that Sheila. I live very close to an amazing whole foods market-- they have an excellent selection of awesome stuff.

and wow Teelbee! I tried your muffin recipe last night... and again today... and I've been experimenting with it. I NEVER thought I'd make muffins so easily! I love love love the recipe! I've adapted it-- added some walnuts & blueberries. I have some dried apricots I'm going to try next time. WOW... just WOW! It's delicious! and SO easy! I'm so excited! Thank you!!!

Man, I have a jar of coconut oil that I keep forgetting to use. I GOTTA start using it again!!!!

Felonee, IMHO, Designer Whey vanilla is the BEST protein powder I have found so far. My local Jewel (Albertson's) carries it and it was on sale the other day, so I bought two cans. I use it in my kefir shakes, Atkins "enhanced" shakes and my mock danish cake (much like teel's recipe, to which I add Atkins Bake Mix also, but also have cream cheese in it) It's the best tasting one I've ever found.

Think I'll have a chocolate "Muffin" for b-fast this morning. I add cocoa powder to mine. YUM!!!!!!!!! (I will add coconut oil to mine this morning!!!!)

Kelly, I'm using Spectrum unrefined organic coconut oil. I hope I got the right kind-- there were two to choose from-- unrefined & refined. I thought unrefined would be better than refined.

And Barb, cocoa powder in the muffin sounds divine! I got some dehydrated blueberries & apricots the other day. I tried one with fresh strawberries too & that was pretty good. I love to put a few walnut pieces in it as well. I love experimenting. So much fun!!!

Jess, chocolate "cake" is WONDERFUL and makes you feel like you aren't depriving yourself of anything. I will also make a cream cheese, cocoa powder, butter, splenda concoction to make "frosting" once in awhile too. I don't do it very often since it is soooooooooooo calorie dense. This stuff is GREAT with fruits and nuts in it too. Tastes like cheating!!!!!!!!!!!!

I use Tropical Traditions http://www.tropicaltraditions.com it's great. You can only get it online though. I buy 32oz for $25 or 2 for $45. I scramble my eggs in it and use it whenever I would normally use cooking oil. It's GREAT to saute veggies and shrimp. AND I eat 6 TBS a day. I should probably be on overdose when I do have some in my pantry. I haven't had any since July... :(
Does anyone know of one that's comparable that is available for purchase in health food stores? My health food store will order something if I ask. I've not asked abt the VCO from TT though.
