So I experimented last night when I baked my butternut squash, and I toasted the squash seeds with salt. They tasted like hard popcorn to me. I had maybe 1/8 cup, but I had no idea what the carb count was.

OK, just looked it up - one cup of squash seeds, roasted with salt, is 34.4g carbs. But I can't imagine eating that many. 1/8 cup, which is what I had last night, is 4.3g carbs. Definitely not an Induction snack. Probably a quarter-cup would be a decent snack, at 71.36 calories, 3.1g fat, 8.6g carbs, and 2.97g protein. I don't know.

Looks like you get more bang for your carb buck if you stick with sunflower seeds. A quarter-cup of hulled roasted seeds is only 5g carbs, but a whopping 208 calories! So I guess it depends on whether you are more focused on carbs or calories.

Pine nuts are a better deal, calorically and carb-wise. 5.5g carbs per 1 ounce, 179 calories, and 3g fiber. Having never had pine nuts before, though, I don't know how "big" an ounce is in measure.

What do pine nuts taste like? Are they more of a seed than a nut?

I'd like to find a good-tasting "seed" snack to satisfy the occasional "crunch snack" need, without going to crackers or chips. Thoughts?

Does it have to be seeds?

I think pistachio nuts in the shell are good for keeping the hands busy for a long time. 20 nuts = 70 cals and 2 carbs.

I like pumpkin seeds and found them in my local Kroger. David Pumpkin Seeds have 200 calories and 4 net carbs per half cup. Unlike nuts, they don't leave me wanting more. I've found that I am satisifed with a half cup.

Macademia nuts are very low in carbs; but very high in calories.

Soy nuts, toasted and salted soy beans, aren't ~too~ bad. Some taste better than others. For a while Whole Foods had pretty decent soy nuts; but then they changed suppliers and I didn't like them any more. Trader Joe's sells a version that's okay (barely).

1/8 cup of soy nuts rings in at:
80 calories
5 g fat
5 g carb
5 g fiber
9 g protein

After you subtract the fiber, that's about as low carb as a crunchy, nutty snack gets.

Alas, they will never taste as good as peanuts, pumpkin seeds, pistachio nuts, macademia nuts, peanuts, etc.

J, did you subtract the fiber from the carb count?????? Don't forget to subtract the fiber!!!!

Pine nuts are to DIE for!!!!!! I buy them at whole foods (whenever I can get there) and then litely toast them in butter or olive oil in a frying pan for about 5 mins, stirring constantly until they are starting to brown. I add sea salt and some finely ground spices (of your choice) and mix real well. Plain and if toasted in butter and salted, they taste like popcorn to me. I have to watch it or I will eat the entire package. They are pricey, but a wonderful treat once in awhile. (This would be a savory mixture.)


My fave thing to do is to make a mixture of EVERY kind of nut you can think of. I have a bit of cashews, mac's, almonds, toasted pecans and walnuts, peanuts (uncoated), sunflower seeds, you name it. (Brazil nuts and hazelnuts if I buy the canned mixes) and measure out a quarter cup of them and put the rest away. They have replaced my chip habit. I LOVE seeds and nuts!!!!!!!!!!!!!!

You can make a sweet nut mixture too with cinnamon and splenda. Brown the nuts and seeds in butter or lite olive oil, sprinkle with splenda and cinnamon and stir to coat. Cool completely and keep in an airtight container. HEAVEN!!!!!!

Just remember to practice self-control with these little gems since they're really calorie dense. If you've been losing weight well and then stop and have been eating seeds and nuts, those might be the culprits.
