| Next Saturday, we're going to 2 parties (yes 2) in Canyon City (a little over 2 hours away). The first is a baby shower at 11am (which is a 'cover' for the second party), and the second is a surprise Bday party at 2pm which also happens to be potluck. SO... I've been thinking... what could I take that I could eat that would also stay 'okay' in a cooler for approx. 6 hrs? I'm still not sure what to do about it. Called the hostess to RSVP last night, and she said "bring dessert". Suppose that's a possibility. I *could* make a non-LC dessert and then just pack a cooler of food (celery, cucumber, Atkins bars, nuts and cheese) for me in case there are no LC options there. Just don't know how well that would work out (how well I would do with that). Have to think this over. I'm just a bit nervous about it. That's a long time to be away from home and subjected to all sorts of goodies. Ya know? Then there's always... how do you explain your eating to others. How to respond to those questions about why don't you have some of that?, etc. For a bit last night, thought to myself "maybe I'll just go off-plan". BUT, I REALLY don't want to do that (go off-plan), so I've got to figure out a way to stay on-plan. TIA for any help/suggestions.

| Bring something you want to eat... if she said desert - how about some fresh berries - strawberries, blueberries, and blackberries, then some real whipped cream.... or just plain cream to pour over them... that is lc and everyone will love it (you can bring a pound cake, or angle food cake to appease those that want their cake too....) another thing you could bring would be an antipasto plater various hams, salami', olives, marinated veggies, artichoke hearts, some hard cheese - parmasian or romano - and some olive oil and vinegar .... easy and everyone can eat it. those are just two ideas...

| Meat and cheese platters are always good. Desserts? Strawberries... definitely strawberries. Fresh, and delicious. ;-) |

| Deviled eggs are also a nice l/c dish to take to help you avoid temptation. In addition, since you have been asked to bring a dessert, you could make a nice l/c cheesecake or, if you have the ingredients "Aunt Ruth's Pecan Cake" would be a good dish. On the simpler side, you could make a ring mold of sugarfree jello with fresh strawberries.

| Good suggestions. As for what to "tell" people about your eating, just tell them that you're avoiding sugar and starch. That covers most everything you wouldn't want to eat. As for "why don't you have some of that?", how about "Not now, thank you." Have a good time! It's about more than what you eat or don't eat.

| Debby, if you have almond meal, make a low carb pound cake, and take sliced strawberries that you have sweetened with Splenda, and a can of Land O Lakes Splenda-sweetened whipped cream, and you have a wonderful low carb dessert that tastes absolutely wonderful. The meat and cheese plates are also a good idea, so that you will be sure to have some legal foods to nibble on. You might also add some little dill pickles, or the Splenda-sweetened gherkins you can buy now. Celery, radishes, etc. will round out the plate. And all that should stay ok in a cooler if you have plenty of ice to keep it cold. Just make sure it's all in containers that won't let water leak in as the ice melts. Have fun, too. And make sure you drink lots of water; that will help you feel more satisfied with what you eat, and keep you well hydrated. You are going to do great! |

| Everyone, thanks for your suggestions. I think what I'm going to do is just take the fixings for a veggie tray, and then bring an Atkins bar, almonds, and some cheese for me. I'll keep this post "marked" though, in case I need it another time. You all had some great ideas.

| A fruit bowl or tray is also a nice dessert. I sometimes take some whipped cream cheese, add some lc sweetner and cream and whip it together for fruit dip, and whatever collection for fruit you like. And of course, you can never go wrong with something like George Stella's New York Ricotta Cheesecake. It takes a while to make, but I've never had anyone (lc or not) complain. Lots of good ideas here! |

| I hope you had a great time at the parties! I have found the best thing for me at parties is to eat before I go, find the meat/cheese platters, and if anyone says anything about what I am eating or not eating, just tell them I am going low carb. When it comes to craving sweets that might be at the parties, I am able to fight the urge with a good cup of coffee or hot tea with a little cream & splenda (I always carry my own splenda!) You can usually find some coffee or tea at parties. Sipping on something hot helps fight the cravings. And then, after all the sweets are gone, I just remind myself how cruddy everyone else must feel, all sluggish and full, and how good I feel because I have been good to myself! |
