Good Evening Everyone.... I'm new to this site, and I am still doing alot of reading about Atkins, ect... My husband actually did this a few years ago with great results but because I am an avid runner I thought restricting my carbs would hurt me with my love of running. Anyhow, 2yrs later after a vehicle accident I have noticed the weight come on and I'm very interested in changing this part of my eating habit but have NO IDEA how to creat meal plans that would be suitable for my children, my husband and myself. I work full time and am in school full time as well, I'm limited to the actual cooking time I have. Could someone direct me to a website that would have tastey recipes, at this point anything would help.melasa_74@yahoo.com

Given your busy schedule, I think you would want to keep it simple.

Make something easy like oven-baked chicken, steamed veggies, a salad. Then throw in some potatoes to bake with the chicken for DH and the kids.

Flash frozen chicken breasts help when you need to make a meal come together pretty quickly - they can be cooked without defrosting.

Ditto pre-made frozen hamburgers. If you don't have time to make Spinach "bread" or Revolution Rolls to use as your burger "bun", use lettuce or cabbage leaves to hold your burger.

Salmon, shrimp, tuna, and egg salads are nice.

I like to hard boil a dozen eggs at once for snacking and adding to salads.

When you cook, make double recipes so you have leftovers to use for another meal. Cook two chickens instead of one. A good size roast can take care of several days worth of meals.

You can buy ready-to-eat rotisserie chicken at many large supermarkets on the way home from work or school.

ok, I've seen the reference to 'revolution rolls' in a couple of threads. Can someone post a recipe to the food section for those of us who are still clueless as to what this is?

I'm not sure how family friendly this is, but it is my favorite Atkins meal. So easy to prepare, literally takes 4 minutes start to finish.

2 frozen burgers (0g)
4 slices precooked bacon (0g)
1/4cup mayo (0g)
1 TBSP ketchup (4g)
1/2 tsp Chili powder (<1g)
1/2 tsp black pepper (0g)
2 oz. extra sharp cheddar cheese (<1g)

Cook the burgers in your Foreman Grill. (they RULE!) While they cook, mix the mayo, ketchup, chili powder and pepper into a zingy Russian dressing. Slice or shred the cheese on the burgers. Nuke for 20 sec. to melt the cheese. Slather all of the dressing onto the cheeseburgers. heat the bacon, and break the slices up over the top.

Dig in! 6g of carbs, total decadent rich heaven.

*Llarion prefers Hellman's mayo (Best Foods west of the Mississippi), Heinz ketchup, Kraft regular extra sharp cheddar, Hormel pre-cooked bacon (great price at Sam's Club) and full fat regular ground beef (~30% fat, a lot cooks off, but you need to keep your protein/fat balance with sufficient fat to keep excess protein from metabolizing into body fat)

Good Morning & Thank You for the replies. I stayed up late lastnight creating menus for the first wk of induction, and I'm keeping my fingers and toes crossed that I can do it.... wait, I know I can do this. Being new at something isn't always easy, so thank you again for replying.

I precook at lot on the weekends so I can just reheat during the week.

Chicken breasts, BBQ'd ribs, meatloaf, whatever your family likes.

Then I make a big cauliflower salad, or coleslaw, and clean greens and stuff for salads. It makes it easy to "mix and match" during the weekdays!

The chicken breasts are great it you take one of those Rotelle cheese logs (mozzarella rolled with basil and prosciutto) and slice off several thin slices per serving, cover the chicken breast with 2-3 slices, then stick it under the broiler til the cheese melts. This is my buddy Ouisue's idea and we love it!

This gets easier as you go along, trust me.

Also, I just got Dana Carpender's cookbook, 500 Low Carb Recipes, from Amazon.com and there are TONS of great recipes in there, most quick to fix. I made the Chicken Paprikash the other night and it was excellent.

There are lots of websites with low-carb recipes too, try using a search engine like Yahoo or Google and just type "low carb recipes" in the search field - you'll get more recipes than you know what to do with!

And, here is a recipe I lifted from an earlier LCE forum topic (sorry, didn't note the original poster's name, but we are all grateful to her). This spinach bread (attributed to Susanne Sommers) is even faster to make than the revolution rolls. I like to use salt & pepper, garlic, and Italian Herb seasoning in the mix, then I sprinkled about 2 tbs of grated reggiano cheese over the top.)

Spinach Sandwich "Bread"

1 box chopped frozen spinach (defrosted and drained if it's watery)
4 eggs

Optional: Add to your taste, any or all of the following:
Parmesan cheese
bacon bits
salt & pepper
minced garlic
paprika
dehydrated onion
herbs

Mix it all together. Spread it in a greased 8" or 9" square pan for thick bread or a 9" x 13" rectangle pan for thinner bread. I like to make it in a rectangle pan for the thinner bread. Now, the trick is to really grease your pan well with butter and then with pam, so it will come out easily. Or, line the pan with greased baking paper. Bake at 400 for 15 minutes or until firm. Let cool, cut into squares, and using a spatula go around the edges ease out the first "slice". It will be a little hard at first but then it will get easier once you get the sides started. Some people say they remove the whole thing from the pan before cutting - so it's one big sheet. But, that seems more difficult to me.

Even my kids ( I have 2 teen daughters, and 2 preschoolers) have gone mostly LC. They eat what I eat, but when I have LC pasta they have the regular variety... potatoes? haven't seen any of them in 6 weeks and thanks to the mock mashed potatoes (cauliflower) we haven't missed them! I only buy LC bread and buns for the house so the kids eat that, and honestly don't notice the difference. I'm buying Health For Life LC bread products at Wal-Mart and my local small town grocer. A loaf of bread is about $1.60 which is what regular bread costs around here. The hamburger and hotdog buns... we can't tell a difference between them and the name brands and the sliced bread comes in wheat, sourdough, white, and italian. Basically for dinners, we have our meat, a salad, some other veggie and I will make some SF jello or other LC dessert. For snacking, I keep sunflower seeds, nuts, and blue berries, which everyone in my family loves. I no longer buy sugar, but only splenda in packets and in bulk, so their Kool-aid is made with splenda, as are any desserts, etc. So, as you can see, I haven't been planning separate meals for me and them... just make a couple alterations for them every great now and then. They still have their yogurt, fruit and other snacks. I have a rare piece of fruit but mostly berries.

I found "Food for Life" low carb bread at Trader Joe's if you have one in your area. It's not bad bread. I had a BLT the other night. It was delish!!!! Really tho, keep it simple. Meat, veg, salad. I also like to make Lasagna with Zucchini "noodles". Just make regular lasagna and substitute the pasta noodles with thinly sliced zucchini slices, cut lenghtwise, peel first. Layer as you would regular lasagna, cover and cook for about an hour. Line the bottom of your oven with foil, as you will surely get drips. I like to go to www.lowcarbluxury.com for recipe ideas. I also hunt the web for ideas by searching ont he terms: low carb recipes. Holy cow, there's tons!!!!!!!!!
