| As I write this, I'm sitting at the hospital bedside of my husband, who is on his 5th day of tests for a mysterious illness. Today's test: CT scan for liver function. We are not having any fun. However, I see this as a real turning point for him, and I'm kind of excited about it. It's about time he joined me on the Journey of Low-Carb eating. So, while I watch and wait for this ordeal to wind down, I'm planning my new role as the household cook, taking over from him for the foreseeable future. Although he has done a good job of editing his cookery to suit my low-carb persuasion, he is about to learn how beautifully he, too, can eat with a low-carb menu. Before he comes home, I'm clearing out the fridge and the pantry. No bread, buns, chips, croutons, or stuffing. No jam, jelly, sweet salad dressings. No bottled sweet tea, soft drinks, or (and this is the biggie) wine. Soon, however, he will learn how richly and deliciously we will eat. I just downloaded a low-carb recipe for moussaka that sounds heavenly. And what about crispy fried chicken? Oh--and a decadent thing called Bacon Cheeseburger Casserole. Herb-roasted chicken wings? Ooo, yummy. He's going to be sugar-free, and loving it. I can't wait to have him back in the best health ever. Your favorite recipes welcome! |

| Hi, Barb. Sorry to hear your DH is having some health problems, but happy to hear that he'll be joining you in this way of eating. I know you'll be a great cook!

| Barb, when dh comes home I do think he'll be motivated to really appreciate your commitment to his recovery. I'll have to share my latest recipe find with you. It was darned amazing (almost brought tears to dh's eyes, LOL) and if I can make it, trust me it's easy, too. Off to the kitchen!

| Barb - Best wishes for your Dh's quick recovery! That's great that you can dwell on the positive in this. Yes, he won't miss high carb foods (much) if you can get a little creative in the kitchen. (And Brenda I'd love that recipe also. I haven't cried in a while. LOL) |

| Barb-I want to echo what the other folks here have said: while I'm sorry to hear your DH has had a difficult time, he couldn't have a better or more dedicated low-carb cook, I'm sure. And I'll bet looking for stuff to make sure he's enjoying his lc eating will even help you find some new treats to enjoy yourself. Sending good vibes for his recovery (and adjustment to his new WOE). |

| Thanks for all your good thoughts! Recipe input most welcome. At this point, dh will be in the hospital...well, indefinitely. I'm so spoiled by being cooked for. Just sitting down to make a menu paln for this week was puzzling. Now I know why he's constantly asking me, "What would you like to eat?" Imagination fails instantly. I'm cooking for myself and my adult grandson-in-residence (he's a college student). The line-up for this week? Bacon/Cheeseburger Casserole, Oven-Roasted Chicken Wings, and Deep Dish Pizza--all from various low-carb sources. I think this sounds like a good start, don't you? |

| You can also find some really tasty recipes at linda's low carb website i hope i'm allowed to put that there but she rates them herself and i've tried a few that are very good |

| Barb (and Rob) I'll pm that recipe to you. I copied it from an lc cookbook and although I changed it a bit, I want to give credit to the author---when I figure out which book it was in. Duh. It was called Quick Chicken with Fontina and Proscuitto--really, a saltimbocca with chicken rather than veal.
