I did some research and discovered something interesting. Whole milk 1 fl. oz. 1.379 carbs and 18.3 calories, 2% milk 1 fl. oz. 1.427 carbs and 15.3 calories, half and half 1.299 carbs and 39.3 calories, heavy cream 1.379 carbs and 102.8 calories. My question is that with only .08 carb difference between whole milk and half and half but almost 1/2 the calories, why is milk considered a no no? Even the difference between 2% milk and heavy cream is only .596 carb. Just curious what everybody's thoughts are on this. My DH loves drinking milk and it is quite expensive for him to be drinking half and half when there is such a small difference. There is .64 carb difference between 8 oz. half and half and 8 oz. whole milk.

One ounce of cream is very rich and fulfilling. One ounce of milk is almost invisible. The nice thing about cream is that it's milk with most of the carbs and water removed.

The numbers I have from the USDA site are a bit different from yours, but what you don't have listed are the "sugar" totals

Grams per 1tbsp
-----
Whole milk 1.604
2% milk 1.543
1/2 & 1/2 .024
Heavy cream .017

So even though some carbs may be there, they don't come from the sugar and that's a good thing.

And I also like the fact the cream and 1/2 & 1/2 are more expensive because it gives me an incentive to use less, thus fewer carbs again.
