Those Muffins Rock!

Default Those Muffins Rock!

Those muffins that are made out of flax seed and wheat bran (someone posted the recipe on this site) totally rock! It satsifies my need for a bread-like food, while containing only 1.5 "effective" carbs per muffin. I did all the math yesterday. There are 5 carbs in the wheat bran and 4 in the flax seed, for a total of 9 carbs in a muffin. But there are 4 grams of fiber in the flax seed and 3.5 grams of fiber in the wheat bran portions for one muffin, for a total of 7.5 grams of fiber. If we are allowed to subtract fiber count from carb count, that gives us 9 minus 7.5 or 1.5 grams of carbs. The less good news is that men under 50 need 38 grams of fiber a day! I get some from the few nuts I eat (about 2 grams), and veggies (strangely low-carb veggies seem to be low in fiber...spinach and brocoli in the amounts I eat it only give me a few grams). But that only accounts for about 5 or 6 grams. But now I can eat a few of those muffins a day and get kinda close (way closer than I have been) to getting the fiber I need. Let's see. I would need to eat 4 per day. Could it be that's a little extreme?

I just learned that there are 2.5 grams of fiber in 2 tsp of ground cinnamon. So if you put 1/4 tsp (optional in the in the recipe) in your muffin, you boost the total fiber count from 7.5 grams to 8.75 grams (adding the 1.25 grams from a single tsp). That takes the net carbs per muffin down to .25 grams!! Yay! Now I only have to eat 3.5 - 4 muffins per day to get 38 grams of fiber.

Hi Ima,
Yes...gotta love those OMM's.
Of note, they are pretty calorie and fat dense; some folks can get away with eating them twice a day, some of us cannot.(I happen to fall in the can NOT category )

I make a big batch of Maggie's cereal and use it as my base for my muffin. About 1/3C of cereal, 1 egg, 1 tsp of oil, scant 1/4 tsp baking powder, about 5 pecan halves, broken into pieces and whatever extract I chose. I sometimes stir in 2T of canned pumpkin. One of my favs though is to use 1tsp ground cinnamon and about 1/2 tsp orange extract. YUM-O!

So, play around with it and see what you like.

Good point, Shelley.

There are so many variations on this theme, that it's a good idea to run the nutritionals on whatever version one's making.

... and keep in mind, for most of us, this is a MEAL, not a snack. Depending on your activity level, YMMV.
