| My brother and new sil are coming over next week for a few hrs. Getting here about 2:30 - 3:00. They are not lcing. What should I feed them, I really don't want anything to heavy and I certainly don't want to blow my diet. Help me please. |

| Snickers, can you give us a little more info? Budget? Likes, dislikes? That would help me to help you! I'd be tempted to say do a roast chicken with plenty of veggies and a big salad with the works on it, bacon bits, grated or bleu cheese, etc. Also it will help if we know what stage of Atkins you are on - induction, OWL?? You can always provide a basket of rolls to those who are NOT LC - just don't eat them yourself. That's what I often do when I have guests - get some nice crusty rolls and let 'em have 'em! Freeze any leftovers for another time or feed them to the birds outdoors. Char Don't squat with yer spurs on! |

| If you think your guests will feel a little weird without a "white" dish, you could make up a big bowl of mashed cauliflower. Marcie Lynne's cauli mash recipe* is my favorite and was quite well received when I served it to non-dieters. Otherwise, baked potatoes are easy. Just pop a couple of potatoes in the oven for your guests. You can serve berries and cream for dessert or an LC cheesecake. I went to dinner last month and the hostest (also LC) served blueberries with a selection of nice cheeses for dessert. | There's absolutely nothing wrong with serving a meat, a veggie and a salad. I always make a sugar free, no bake cheesecake for dessert for family get-togethers and there's never any left. I take 2 8 oz bricks of cream cheese, softened and mix 1 pkt of unflavored gelatin (dissolved in 1/4 cup of water first) and add about a cup of pourable Splenda, 2 tsp. of lemon extract. Mix it all up with beaters and pour into a pie pan and let it chill a good 3-4 hours. I have also topped it with strawberries thickened with Xanthan gum (health food store). Oh is that GOOOOOOD!!!! I have also made a crust with almond flour (1 cup), flaxmeal (2 TBS.), oat flour(2 TBS.) and butter (1/2 stick, melted). Mix this all up and press into the bottom of a pie pan and bake for 10 mins at 350. Let it cool and then pour your cheesecake batter in. YUM YUM!!! I think I got 12 pieces out of it for 2.85 carbs per piece. If you make bigger pieces, of course, it will be higher in carbs. | WOW, that cauli=mash recipe sounds just wonderful, Usually I just steam or boil add a little butter, or sour cream to the cauliflower and munch away, but this sounds just great... cant wait to go to the store and buy some and make some.tks for the recipe carolyn in texas |

| Just had my own version of the cauliflower last night. Though I used a mix of Parm and Asiago for the cheese, added some garlic, bacon, salt, butter and just a splash of cream. It was great. I think adding some kind of cheese to the mix is the true secret to these being as tasty as taters... |
