Default Chocolate!

Yesterday I was stuck in an airport waiting for my final leg home. I was a bit hungry, but not for yet another bacon cheeseburger without the bun. I was having a bit of a craving for something sweet, but was determined not to go off-plan. So I started poking around one of the shops in the chocolate rack. I was surprised to see that some of the chocolate bars were not as high in carbs as I would have thought. But then I came across a Lindt Excellence Dark Extra Fine chocolate bar (85% cocoa). Get ready for this....there are 8 grams of carbs per serving with 3 grams of dietary fiber! And a serving size is 4 squares!! (1.75 in. x 1.5 in.). That's essentially a bit more than 1 carb per square! Oh yeah. Now you have to like really dark chocolate that isn't very sweet, but it is REAL chocolate. When I did this diet in the past, I ate those "low-carb" choclate bars that were all full of sugar alcohols and splenda. They tasted good, but they were horrible for making you gassy and the sugar alcohols made it impossible to determine how many actual carbs you were getting, since people metabolize those differently. But this is truly a wonderful find. Now you can add a bit of dessert to this WOE!

Wow! What a great find! I'm going to have to keep my eye out for those.
(And what's nice, too, is it's pretty difficult to go overboard with very dark chocolate because it's sooo rich!)

True. But it could be added to other stuff, melted, etc. to thin it out. Wow, the possiblities are vast.

My HFS carries several lines of organic chocolate... extra strong (77%) and strong(70%). There are also some that come in at 85% cocoa to. The more cocoa, the less carbs. But...a word of caution...some of the very, very dark chocolate bars have added sugar.

I usually measure out half an ounce of almonds to eat with my very strong chocolate. Yum-O!!!

I agree with you, Ken...eating the very dark, pure chocolate on occasion is waaaay better than the SA laden so called *chocolate bars*...ack!

I like the ChocoPerfection bars. The dark chocolate. Here's the list of ingredients:

Ingredients: Dry cocoa solids: 60%, oligofructose*, erythritol*, cocoa butter, lecithin and natural flavors.

I got the following info from Carbwire on oligofructose:

"4. Fructooligosaccharides (FOS)

In addition to providing soluble fiber, this also is used as a sweetening and bulking agent that does not raise blood sugars. Sweeter than inulin, this fiber allows for a "creamy mouthfeel" (if you've ever tried the delicious low-carb ChocoPerfection chocolate bars made with an FOS called oligofructose, then you know what I'm talking about). Additionally, this can actually be used as a replacement for fat and sugar."

We like these bars. Haven't tried the milk chocolate ones, only the dark chocolate. Each bar has 5 generous pieces.

Here's the nutrition breakdown:

Total Calories197 Total Fat 18 Trans Fat 0 g Cholesterol 0 mg Sodium 0 mg Total Carbohydrates 16 g Dietary Fiber 14 g Sugars 0 g Protein 1 g

So 2 net carbs per bar, and lots of fiber, no sugar alcohols, no sugar. I get mine from netrition.com.

Any way we can get chocolate and still stay on our lc plans is just absolutely wonderful. I'm glad we've all found a way to have our chocolate "fix" when we need one.

Nita, here is part of an article providing some additional benefits for oligofructose. "Oligofructose is a subgroup of inulin, consisting of polymers with a degree of polymerization (DP) (for some reason, the system cuts off the quote at this point and will not let me post the rest of the quote.

Shelley,

If the nutrition label reports a carb count of X grams, does that not already take into account the carbs imparted by the sugar content? For example, this chocolate reports 8 grams of carbs per serving, and 5 grams of sugar. I don't have to add more to the carb count because of the sugar, making the carb count higher, do I?

Ken, if the label is accurate, the sugar carbs are included in the total carbs.

Ken,
Yes, what is stated on the label accounts for the sugar carbs, as Henry says. You do NOT have to add more carbs to the count. My point was, some of the dark and strong chocolate you buy, has added sugar; be careful it doesn't awake cravings. I still only eat it 1 or 2 times a week....and believe me, I am about as BIG a chocoholic as they come!

I love these dark chocolates. They are very tasty, and (unlike the "low carb" chocolates) they have a pretty accurate carb count.

the quote henry was trying to post...

Quote:
Oligofructose is a subgroup of inulin, consisting of polymers with a degree of polymerization (DP) 10. Inulin and oligofructose are not digested in the upper gastrointestinal tract; therefore, they have a reduced caloric value. They stimulate the growth of intestinal bifidobacteria. They do not lead to a rise in serum glucose or stimulate insulin secretion. Several commercial grades of inulin are available that have a neutral, clean flavor and are used to improve the mouthfeel, stability and acceptability of low fat foods. Oligofructose has a sweet, pleasant flavor and is highly soluble. It can be used to fortify foods with fiber without contributing any deleterious organoleptic effects, to improve the flavor and sweetness of low calorie foods and to improve the texture of fat-reduced foods. Inulin and oligofructose possess several functional and nutritional properties, which may be used to formulate innovative healthy foods for today's consumer.

I tried the chocolate! It is fantastic! 3 carbs for a square and a square is all I could manage because the chocolate is so rich.
I am off of it for now, back on induction, but what a great way to have a treat that satisfies!

I found these in with the regular candies in my local Albertson store (I live in So. Cal.). I keep them on hand because I have a couple of recipes that call for this kind of chocolate.
