I made a chocolate cake! It was a snack-type cake, but turned out more like brownies. The kids have both scarfed down a piece already and keep hopping around asking for another! LOL! It tastes really good, but boy was it odd to make a cake without eggs and flour.

We're running to the grocery store right now to pick up a couple of ingredients, then I'm going to give Sharron's pumpkin granola recipe a whirl. It sounds too good!!!

Char and Tonya-

Sorry I didn't post this sooner. Like I said, had to go pick up stuff for the pumpkin granola.

My recipe is:

1 C almond flour
1/2 C chocolate or vanilla whey protein powder
3T cocoa powder
1 tsp baking soda
1 C Splenda
1/2 tsp salt
5 T canola oil
1 T cider vinegar
1 C cold water

Combine almond flour, protein powder, cocoa, baking soda, Splenda and salt. Stir well, breaking up any lumps.

Spray 8x8 (or 9x9) baking dish with nonstick spray. Pour the dry mixture into the pan. Make two wells in the mixture. All oil to one well, vinegar to the other. Then pour the water over the top. Mix well with a spoon or fork until well combined, be sure to scrape sides and bottom of pan.

Bake 30 min in a 350 oven.

Don't get excited and do what I did. I pulled a piece out the minute it was out of the oven and it fell into crumbs. Patience is a virtue...that has not been bestowed upon me.

Yields 9 servings
Each serving:
7g carbs
1g fiber
12 g protein

Enjoy!!! We're having ours with homemade ice cream tonight.

This is an lc adaptation of a recipe I have used for nearly 30 years called Crazy Cake! I will certainly be trying this soon. Thanks for posting.

WOW, as soon as this heat wave ends I'm tryin it. I bet my DH will eat more than I will. Why are there no eggs in it? I wonder how it would turn out if you put eggs in it. Hmmmmm, can't wait for the cooler weather.

Deb-it reminded me of those old cake mixes that came with their own pan. I think they were called Snack'n Cake. You just mixed up all the ingredients in the pan.

Barb-ooh, I bet the eggs would fluff it up a bit. It was good, but it fell and became very brownie-like when it came out of the oven.

Well, it was dessert tonight. I made whipped cream with Davinci Amaretto syrup to put on top. DH LOVED it, DD (3yo) ate her's right up, and DS (20mos old) ate his and 1/2 of mine. I guess it was a hit!!
