| I start work at 8:30 and I work til 4:30 (m-f) Therefore, I am usually up at 7am to be at work on time. I am not eatting from dinner time (most of the time I am not hungry and i don't have a snack after dinner) til lunch the next day! By the time that 10:30am rolls around I am so hungry, my stomach resembles a roaring lion ! Any quick on the go breakfast meals? ( Induction style please) Breakfast is my own hang up! I have the dinners down, the lunches, the snacks are bearable..but breakfast, no time and I can't come up with anything that fits me or suits me needs.. ![]() SOS!

| I love Maggie's cereal with berries and cream(see sticky in Recipe thread)... and it's something you could make at work if you needed to, but it's pretty quick to make in the morning. Also, egg muffins (basically scrambled eggs (or egg beaters) with whatever additions you want poured into a greased muffin pan, then bake at 350º for 20 ish min) or an egg casserole (let me know if you need a recipe) are really great because you can make ahead of time, then just pop them in the microwave in the morning. You'll have a week's work of breakfast just cooking once!

| PQ, when I want/need a quick breakfast that I can prepare ahead of time, I usually make a One Minute Muffin using Maggie's cereal mix as the flour substitute. I usually flavor it with cinnamon, allspice, nutmeg, and clove to make a spice muffin and spread some cream cheese on it. That makes a very filling breakfast that lasts me for 6+ hours. Another thing I do is make what I call "deviled egg rolls". I cook a couple of beaten eggs in a 9" skillet so I end up with an egg "tortilla". I then coat the egg with a mixture of mustard and mayo, and then sprinkle with any or a combination of either a sliced green onion, jalepenos, or splenda sweetened pickle relish. I then roll the egg like a jelly roll, wrap it in plastic wrap and refrigerate until needed. They keep several days so I can make several at one time.

| In addition to the cereal, I often do something similar to what Henry does. (using one egg in a slightly smaller pan.) I roll the egg "tortilla" around one or two cooked breakfast sausage links. I then (when the cool down a bit) wrap each one in waxed paper and store in a big ziplock in the fridge. I usually make a couple at a time. Then, I can nuke one when I'm in a hurry and, using the waxed paper as a "holder", I can peel it down and even eat it in the car.

| Make some Pumpkin Pecan Sour cream Breakfast bread , omit the nuts and it's induction legal. This is very filling with a spoon of cream cheese and a couple of slices of bacon on the side. hth

| I just discovered these on another forum (linked below): Cream Cheese Muffins 2 8oz. pks. philadelphia cream cheese 1/2 cup sweetener (I use spenda) 2 eggs 1/2 tsp. Vanilla cinnamon Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer till smooth. Pour into 12 muffin pans lined with the papers. Sprinkle with cinnamon. Bake at 350 for 20 min. The lady says that her DH eats them for breakfast every day. OMG! Cheesecake for breakfast every day... I think I'm in heaven! ![]() BTW... Shelley - I am SO going to make that bread!!!

| I like baking a breakfast casserole adn freezing individual servings and I eat them in the car or when I first get to work (I'm horrible at getting in a good breakfast). I mix eggs and a little sour cream and pour them into a casserole dish that's been coated with a little olive oil over the top of sauteed onions, ground sausage, chopped bacon; then top with shredded cheese. I just kind of wing it as far as measurements. Depending on how calories conscious I'm being at the time. Cover with foil and bake for 45 minutes at 325. Then uncover and bake until lightly browned. I then cool and cut and wrap each piece in saran wrap. They are quick to grab out of the freezer and it gives you a quick hot meal.

| Well, I just run it through fitday and for the whole recipe using pourable splenda, I got: 1,744 calories 168g fat 47g pro 26g carb 0g fiber so divided by 12 = 145.33 cal 14g fat 3.9g pro 2.16g carb 0g fiber so, 2.16 g net carb per muffin. They are obviously a fat and calorie dense item; alas, they do sound yummy! hth s

| PQ, though I'm new here, I'm not new to the breakfast dilemma. It has been my personal experience that if I don't start off the day with some forum of breakfast, my whole day is out of control. On the go breakfasts are more of a challenge with LC, so it seems. And where I live eating and driving are pretty hazardous. If it's not some form of police activity, it's Britney causing a traffic back up!! I try for simple NONE odor giving things I can eat at my desk first thing in the morning. A hard boiled egg with some cold slices of steak (now steak you can eat and drive with, but that egg tends to crumble land in your bra!) Chicken salad, stuffed into celery or endive. I have had success with cooking up bacon or sausage and nibbling on that while driving to work - just pack lots of napkins and a wet wipe! HTH, looking forward to learning more from everyone here.
