Trying to get carbs over 30g - how?

I want to do it with GOOD carbs, but for the life of me, I can't figure out how to eat more veggies. Those of you in the 30-40 carb range, what are you eating? bigger salads? more green beans? salads with your salads? TIA!

One half cup of fresh strawberries has almost 4 net carbs. Increase the dinner veggies by a bit and yes bigger salads but with more choices in vegetables. Green or red bell pepper for instance and radishes. blueberries as a snack.
Someone has the link to the Atkins site of approved vegetables and fruit and perhaps they'll post it. Or you could root around at the site yourself.

Put some more cherry tomatoes and olives and pecans on your plate. That will do it. If that's still not enough, you can add fruit like strawberries and raspberries, although that's pushing things and something you should do cautiously.

One of my "challenges" was getting enough fiber. So that was where I started adding my carbs. Fruit worked well for me, just choose carefully. I have added a peach now and then, maybe an apple for a snack in the afternoon.

I'm currently at about 50 carbs per day and still slowly losing.

Dr I - just curious why you recommend caution against strawberries? They have a low glycemic index (32) nearly the same as tomatoes (38) and the difference in net carbs is about 1.4 g with strawberries being the higher. But fiber in strawberries is more than twice that of tomatoes.

Rob, i too love strawberries and had no problem adding them back into my diet

for me - fiber was an issue too. I'd add black beans to my salads, or make a sandwich using a la tortilla wrap.

I added a few berries, homemade lc muffins, and extra salad with more onions, and a lc treat now and then!

Timely post for me as I'm just trying to decide what to add next.

I'm at 4-5 servings of veggies, 1 oz of nuts (almonds or hazelnuts), and a few strawberries a day. This puts me at 30-35g of carbs a day.

Maybe I'll try making and freezing a bunch of breakfast tacos made with LC tortillas to eat in the mornings.

Any other suggestions on how to add beans without totally overdoing things? Would a tablespoon or two of refried beans on my LC breakfast tacos be ok?

Don't forget that you can also add back onions, tomatoes, and carrots - good sources of complex carbs at slightly higher counts.

I have nothing against berries. Personally, I've never been a big strawberry fan, but I can go crazy over the other berries, especially marionberries, which, sadly, I discovered, have more carbohydrates than are good for me. Marionberries are just a variety of blackberry, (a DELICIOUS variety), but they are much sweeter and juicier.

Fruits though I think are something that should be approached cautiously. They are the only naturally sweet items in the diet, and I think it's easy in the beginning of this WOE to rush into them and overdo it. That's what I've done more than once, had to back off, and then approach it again more cautiously. Perhaps it's more a personal behavioral issue than a "glycemic issue." Heh...

So, for me, marionberries are out. Raspberries are in. It's easier for me to avoid the temptation to pig out on a whole 8 ounce basket of them at a time. Also, raspberries are more aromatic than blackberries so you get a nice smell.
