Rum Balls, candy what't in it?

Does anyone have the recipe that was in the Atkins book about 15 years ago? The new books do not have this recipe. They are candy made with choc pudding, cream cheese, rum flavor, half and half, then rolled in Walnuts. They are only 2 carbs per candy. So good, but I lost the recipe. Please Help!!!

As soon as you said "15 years ago," I thought I'd try looking it up, because all I have are the old books, heh heh...

Okay, in the 1974 Atkins Diet Cookbook, I don't see any Rum balls. I do see Chocolate Rum Charlotte, which has no walnuts...

Under appetizers I see something called Nutty Cocktail Balls, basically some walnut cheese balls, no rum.

It must be in a different, later book. Or maybe it's under a different name? I looked through all the desserts and appetizers. Sorry.

I would love to have that recipe too !

I have this recipe ( i havn't tried it) that I found in Dr. Atikins New Diet Revolution recipe section (I believe the book was 1999)

rum truffles

Oops, the carb count per serving is 13.5 grams and they are not balls, they are truffles. since the count is so high i'm not going to post it unless someone wants me to.

Sorry.

I did check my Dr. Atkins Super Energy Cookbook Copyright 1978 and found a recipe for almond coconut candies (3.0 carbs per candy) and one for coconut candy (2.7 carbs per candy)

Chocolate Rum Charlotte. Makes 6 servings.

1 envelope unflavored gelatin
3/4 cup cold water
1 1/4 cups cream
1 tablespoon of butter or margarine
1 1/2 one-ounce squares of unsweetened chocolate.
1/4 teaspoon salt
1 teaspoon vanilla
1 teaspoon rum extract
1 teaspoon-equivalent sugar substitute

Soften gelatin in 1/4 cup cold water.
Combine 3/4 cup cream, 1/2 cup water, butter, and chocolate in top of double boiler. Heat over simmering water.

Beat as it cooks with rotary beater until smooth and well blended. Remove from heat. Blend in softened gelatin, salt, vanilla, rum extract, and sugar substitute. Blend well.

Chill until mixture is consistency of egg whites.

Whip 1/2 cup cream in small bowl until stiff. Fold cream into chocolate gelatin mixture. Pour mixture into mold. Chill until firm (about two hours).

For some variation, replace rum with 1 teaspoon vanilla.

Total grams 22.7
Grams per serving 3.8

[Back when this was written, they didn't subtract out fiber carbs, although it looks like this recipe wouldn't have any to subtract.]
