I tasted this for the first time and it was good...then i read up on it and has tons of protein...but had a lot of starch too...have anyone heard of this before...

hmmmmmm.....never heard of it, but it looks interesting. How did you use it? Did you bake with it?

What does everyone think of the carb content in it, is it too high?

These are the stats for 1/4 cup of Quinoa. Little too rich for my blood. I could never 'afford' the carbs.

i used it as a couscous...added just a bit of coconut oil in it and spiced it up...really nice...i just had maybe 1/4 cup cause it sure fills you up...then i read up on it like i mentioned and when i saw that starch...ouch...

so not sure what to do with it now...

Quinona is a very ancient type of grain, used by very early civilizations. It was one of the first domesticated, along with barley. Note Key word here, GRAIN. Yes its high in protein, and I've seen it used in a lot of vegitarian dishes, but low carb its not. Sorry.

Actually, I read up on this, and quinoa is not a real grain, although it has the same properties in terms of being rich in carbs. Apparently it's a high-carb nut rather than a high-protein grain.
