| I'm diabetic and I LOVE LC because it totally controls my blood sugar, but I have irritable bowel, so no red meat, eggs or dairy for me. (egg beaters are ok). This pretty much leaves me doing the KISS woe. It seems SO boring!! Is there anyone out there that can offer meal ideas and/or recipes that are just meat & veggies? Thanks!! |

| I prefer Keep It Simple Sweetie !! -Baked Orange Roughy with lime & butter -Grilled chicken served with Greek Salad -Broiled Salmon fillets topped with dijon mustard served on a bed of steamed spinach -Rottiserie Chicken with homemade coleslaw -Turkey patties served with green beans, that have been stir fried in olive oil & garlic. Victors are really just temporary quitters who then regroup with a vengeance. |

| OOOh, I wanna go to dinner at Mona's! Everybody's different of course, but I've basically been kissing for a year now, and I don't find it boring at all. Some kind of protein on the grill, a crispy fresh salad, and a big pile or two of veggies gets it every time for me. Yum! And to tell ya the truth, even I didn't love this kind of food, I love the way I look and feel so much that I would eat it anyway. In addition to the great suggestions above, try grilled shrimp is heavenly, and you can get pretty creative with shishkabobs. Too bad about the eggs, tho. Hopefully you'll be one of the many people who have found that with low-carb, their IBS isn't much of any issue any more. That will allow you to experiment with foods you haven't been able to eat in years! Meanwhile, learn to love the KISS style - eat clean, be lean! | Here are some ideas for you: - Pork chops with Rotkohl (cooked red cabbage, kinda like a mild Sauerkraut, but better) - Tuna Salad over mixed greens - Pork w/greens (collard & that kind) - Chicken salad w/celery in it & tomatoe on side - pork sausages (breakfast kind) w/German style Sauerkraut - not that icky really sauer tasting one - Grilled Trout w/salad or veggies of your choice Hope this helps Never give up! | Get creative with ingredients. You can’t use cream and butter for sauces but you CAN use chicken stock, olive oil, and white wine. These ingredients, combined with aromatics such as garlic, onion, ginger, hot peppers, lemon, etc. will make very flavorful sauces. Buy some xanthan gum (or Thick N Thin Not Starch) and learn how to thicken sauces without using dairy products. And don’t forget stir fry. There is NO dairy in stir fry dishes so you can easily learn some basic stir fry recipes which will help add flavor to your weekly menu without adding cream or butter or cheese. Chicken with Broccoli, Chicken with Mushrooms, Shrimp with Pea Pods, Shredded Pork in Brown Sauce, etc. Also, fresh herbs are a wonderful way to add flavor and freshness to your dishes. A few sprigs of this or a few leaves of that can change a blah piece of fish into a delight. I like to throw a whole side of salmon on my BBQ covered in fresh tarragon and lemon slices. It lightly flavors the fish and doesn’t require a sauce at all. Just a little melted butter (or for you, a drizzle of extra virgin olive oil). The biggest thing you must remember is this; DON’T BE AFRAID. What’s the worst that will happen? You’ll make something that tastes terrible? So what! That’s why they call it experimenting. Dump it out and do something else. You’ll be surprised at how good some things turn out.
