How nice of you to ask about a book. Sharron Long has a book out (and another one coming soon) but I have yet to publish my first one. I'm working on it though, so cross your fingers for me!

Marcie, this morning I made those french toast pancakes (I'm pretty sure that was from your site, if not my appologies) this morning and they were such a treat! I only made about 2 pancakes, so I guess I'll need to double up the recipe if anyone else wants some. Thanks a bunch!

Marcie I took your mock mashed potatoes to a potluck at my church last night it was a big hit an a lc cheese cake. People could not believe they were lc. Thanks for the recipe.

Marcie, last nite i tried your “mock mashed potatoes” in the form of a cauliflower puree. man, they tasted devine!

Just one thing tho....how do i count the carbs?

In your picture, the portion looks bigger than the one i made last nite...i only get 2 servings out of my cauliflower head.

i'm just concerned about the amount of carb in 8oz cream cheese & 6oz of brie cheese because i only end up with 2 servings.

Can you help me calculate the carb please?

Hey Kiwi –

Well, actually, I use 2 HEADS in that recipe, not one! LOL

I generally get 3 servings per head which is why I make 2 heads (so I have enough for 2-3 meals)

As far as carbs go, luckily brie is VERY low, only about .3 carbs per ounce so the brie portion was only about 2. Cream cheese is about 1 carb per ounce so that would be a total of 10 carbs for the cheeses.

The carbs in cauliflower are about half fiber so for one average sized head, I would say it was around 15 grams NET.

That would bring your servings to 12.5 carbs each unless your head of cauliflower was small, then they were probably more like 8-10 grams each.

My recipe (with 2 heads, 8oz cream cheese & 6 oz brie) comes out to about 40 total carbs for 6.5 grams per serving.

Next time you make it, just be sure to use 2 medium-large heads of cauliflower and then divide into 6 servings.

The way you made it, it must have come out extremely creamy! LOL If you really liked it that way, you could alter the recipe by adding more brie. And since the brie is very little carbs, you would only be adding about half a carb to each serving.

you are right Marcie, I thought it was very creamy when i had 1 serving last nite

it is Still come out very nice & tasty tho...

however i will use 2 medium/large cauliflower head next time to reduce my carbs a bit.
