Is Chili low carb?

It depends on whether you are talking about "chili" as in a combination of tomatoes, meat, beans, etc. all put together as a dish, or about "chile" as in a chile pepper, a single ingredient.

If it's the first, be careful--tomatoes and beans both pack a carb wallop. Best to figure out the ingredients and total carbs before deciding.

If it's the chile pepper, I believe you would count it as you would any other pepper (green sweet pepper, etc.)

It's probably not okay, unfortunately. Most commercial chilis use starchy fillers. You'd have to see his ingredients list to know for sure, but it's a good bet. I don't think the tomatoes are the worst part of the carbs.

There are some nice-sounding low-carb chili recipes on the net. I've never tried making one. (Too complicated for a lazy clumsy type like me.)

It would be very cool if we could buy low-carb chili off the shelf at the store. I'm crossing my fingers that that will happen.

Yes, I had an experience with that just today, Doc. I was in the store and saw a can of "chili, no beans" and thought it might be LC. Nope, 18 carbs/serving. When I read the ingredients, I found it was full of starch, wheat flour (I've never seen a chili recipe in my life that called for wheat flour) and other unnecessary fillers.

As the others have said, it's probably really high in carbs.

Let me recommend, for anyone with the cooking gene, using black soybeans instead of kidney beans in homemade chili. Wonderful stuff.

Oh, and low carb chili at the store? Well, it's not perfect, but check out (if they have it in your area), Skyline Chili. I buy the frozen every once in a while. 5 carbs, 2 from fiber per serving. It's "Cincinnati style" chili, so be warned if you've never had such a thing. You'll think you're in heaven or hell--there is no in between!

The starch makes the chili thick. I make my own without the beans or using a small amount of black soy beans and thicken it with Not Starch Thickener.

LC and feeling better every day!

Oops, I guess I did misspell it.

I did go to the grocery store and checked a few labels. Most canned chili is High in carbs. SHoot, I thought I had found another food I could eat to add some variety.

I haven't been looking for chili in the stores. I bought Senator Golwater's Chili Mix from the Atkins website, and just added some low-carb tomato sauce and the meat. I've added zucchini, and I've also tried it with mushrooms. Any way you make it, it is AMAZING!! And it's thick itself. The mix doesn't say that there are any thickening agents in it (just the spices), so that seems to be less to worry about.

Shmoo, thanks for posting about that Skyline chili. Sadly, they don't sell it in California. If I get a strong chili urge, though, I might consider ordering some from their site. It's steep, though. About $4 a can, minimum order of 8. Still, that's cheaper than Atkins.

There are some good Low Carb chili recipes.

Of course,you can always just:

1lb ground beef
1 can tomato puree
1 can black soy beans (if you want, or use a bit of water otherwise)
1 package McCormick's Chili seasoning

less than 10 carbs per 1 cup serving. Add a little Blair's death sauce after the fact for some zip. That way you can leave it wimpy for the weak at heart.

Takes maybe 20 minutes start to finish. Make extra and save some for later.

Doc, if you've never had Skyline chili, I simply couldn't recommend you jump into it with both feet. Seriously, the stuff is wonderful to me, but there are lots of people who hate it beyond all measure. It's got spices like cinnamon in it, which definitely turn chili on its head.
