Thread: Atkins bake mix.....

    I bought the bake mix for pancakes, is this mix also good for breading things like fish? Has anyone tried it? Everything stated on it refers to baking muffins, cookies etc.....Also I was looking to make tempura and thought it may be a good coating???

    At 5'0 I look like an Umpa Loompa..............

    I don't think I would use it as a breading - when I need to bread chicken cutlets I use the KetoCrumbs, and doctor them up a bit with some seasonings.

    Well, be sure to taste it to see if you like the flavor before breading anything with it.

    I bought some Atkins Bake Mix last spring and found it to be ~completely~ inedible. Personally, I wouldn't try breading anything with it. I used the recipe on the box to make muffins. The muffins were dry, hard, bitter little knobs - not fit for anything except a quick burial with a silver bullet and a wooden stake during the full moon.

    The muffins weren't too good when I used the recipe. I tried adding more oil and cooking them not as long, and that seemed to improve them only slightly. So then I tried mixing in a little puree of unsweetened berries. That helped a little more, but it still wasn't going to win any Betty Crocker medals.

    It's fine when mixing with OTHER stuff. I use some with crushed pork rinds and flaxmeal to make chicken breading. I don't use it alone tho.

    I have a seasoning that specifically states to use the Atkins bake mix. I tried it, it was GOOD! Then again, I'm pretty sure it was because of the seasonings and not necessarily the Bake Mix, but yeah, don't use it alone. It doesn't taste like anything.

    I made an eggplant rollanti recipe from the atkins website. the eggplant is fried in a mixture of Atkins bakemix, egg and water. It was pretty good the first day, better the 2nd, but on the third day, the eggplant tasted "rancid" and I could not eat it. Imagine rotten soy flavor in eggplant rollatini!

    Needless to say I tossed 1/2 the casserole

    Next time making my own bread crumbs to do these frying recipes.

    I tried rolling my boneless chicken breasts in it and frying them up. It was real good, esp. when spices are used. But, because of cost, I tend to use soy flour to coat my chicken...tastes great, at a fraction of the cost!

    I used it with my normal spices for frying up chicken and it was fine. Not as good as regular flour, but a good alternative. I did find that it browns a lot quicker than flour. Like cowgirl, I just use soy flour. Even though the carb count is a bit higher, it's a hell of a lot cheaper!

    I like the "Carbsense" baking mix. It is much cheaper and tasts good. I found that this brand makes really good mixes at a decent price.
